  3. On April 14, Disneyland and Walt Disney World Resorts will begin to introduce new allergy-friendly menus at approximately 120 quick-service and table-service locations. The menus provide more convenience and readily available options for guests with special dietary requests. “Over the years, the number of guests with food allergies and intolerances has continued to grow. In 2013 alone, our cast members assisted with more than 650,000 special dietary requests. These new allergy menus are another way in which we can provide high-quality, safe and more accessible alternatives, and the best possible dining experience for guests with specific dietary needs,” says Gary Jones, chef and culinary dietary specialist for Walt Disney Parks and Resorts. The new allergy-friendly menus provide allergen content for each menu item, making informed choices easier. Menu selection includes appetizers (where applicable), entrées, side items, desserts and kids’ meals, and focuses on the most common allergens: gluten/wheat, milk, peanut, tree nut and fish. Guests are still able to consult directly with a restaurant chef or special diets trained cast member. We also encourage guests to continue to communicate special dietary needs to our restaurant cast members, as this allows our culinary team to take extra measures during preparation to prevent the introduction of the allergen. Walt Disney Parks and Resorts is the recipient of a FARE (Food Allergy Research and Education) Award for dedication to providing a safe and enjoyable dining experience for vacationing families and our chefs have been recognized for their commitment to food allergy awareness, education and management. The new menus will be introduced in signature restaurants on April 14, then debut at other table-service and quick-service restaurants (including Walt Disney World water parks, Downtown Disney and resort hotels) through September 2015.   6. Today I’ve got some new eats for you from the Magic Kingdom in Disney World! Fantasyland in Magic Kingdom There are few snacks that are more perfect for warm Florida weather than Frozen Treats! You’d think this would be a fairly limited food genre. An Ice Cream Sundae here, a Pina Colada Slush there. But there’s so much variety that it’s dizzying! You never have to have the same thing twice — if you don’t want to. We all know the popular ones — Dole Whips. Citrus Swirls. Mickey Bars. Handmade Ice Cream Cookie Sandwiches. Birthday Cake Ice Cream Sammy! But what if you’re looking for something a little…different? Well, today’s your lucky day. Because we have not one, but TWO new-to-us Magic Kingdom Snack Options to share with you. And they’re both delightfully frosty, perfect for refreshing you after a long day of chasing Fast Passes and Parades. Wanna see? I know you do. Frozen Yogurt at Storybook TreatsLooking to answer the call of your Fro Yo craving, then head to Storybook Treats in Fantasyland. This tiny spot has been one of my favorite dessert stops for a while, because it offers unique snacks, like Fudge Brownie and Strawberry Shortcake Sundaes. But on occasion, you’ll also find some interesting Frozen Yogurt flavors. And that’s what I was after on a recent visit here. I hit the “out of the ordinary” jackpot when I spied two cool flavors — Birthday Cake and Cherry! Of course, these just demanded that I get them swirled together. That’s what you’d do too, right?? Storybook Fro Yo! Birthday Cake and Cherry Flavors — Swirled Since this is Fro Yo and not Ice Cream, it had that predictable tang that you’d expect. I enjoyed both flavors, and the combo was great as well, but I’d give the slight edge to the Birthday Cake. Cherry and Birthday Cake Swirled Fro Yo — Another Angle Because Birthday Cake. Mango Fruit Bar at Magic KingdomNext, we’re stopping by Maurice’s Popcorn Cart in New Fantasyland. I don’t know if that’s what it’s called. But that’s what I’m callin’ it. Maurice’s features some of the standard, pre-packaged Frozen Treats that we all love — Mickey Ice Cream Bars and Sandwiches, Frozen Chocolate-Dipped Bananas, that adorable Olaf Frozen Lemonade Strawberry Bar (oh, are you STILL here, Olaf?), and the Plain Ole’ Strawberry Bar (seriously refreshing and pretty healthy as such things go.) Maurice’s Popcorn Cart Menu — Click to Enlarge But I also spied something I hadn’t seen before — the Mango Fruit Bar. Here’s the interesting thing, though. It’s not a fruit bar like you think of a fruit bar. One look told me this one wasn’t just fruit, but Ice Cream too. Mango Fruit Bar And if the word “Helado” on the front (oh, and the words “Ice Cream”) doesn’t confirm it for you, the ingredients, which include Cream and Egg Yolk, will. Mango Fruit Bar Nutritional Information Out of the wrapper, you can see that this isn’t just extremely lightly colored; there’s a little pool of mango at the bottom. I’m not sure if that was intended in the design, but it isn’t off-putting. Mango Fruit Bar — Out of the Wrapper Tons of Mango in the Bottom But biting into the top, I got…a whole lot of creaminess. I really was expecting something more along the lines of the Strawberry Bar, or the Paletas (well, minus the super spicy or sour notes) that you get at La Cantina de San Angel in Epcot. Mango Fruit Bar — Inside It wasn’t unpleasant, just not at all what I expected. So plan accordingly if you’d rather experience a non-dairy treat in the hot, hot sun.   15. Flowers are not all that’s blooming at the Epcot Flower and Garden Festival! This event — which is happening right now through May 17 — combines the best of all things: Spring and some truly Awesome Dishes! (For a complete run down of our Must-Eat Treats from this year’s Festival, click here.) The deliciousness comes courtesy of the Outdoor Kitchens. The kiosks, situated throughout World Showcase, provide guests with the opportunity to taste some fresh flavors of the season as well as some regional fare. Smokin’ at the Smokehouse You’ll find fan favorite Smokehouse: Barbecues and Brews located in the America Pavilion, serving up delicious regional barbecue favorites. We love their Pulled Pig Slider with Coleslaw, their new-this-year Smoked Debreziner Sausage, and their Piggylicious Cupcake! But they’ve also introduced a brand new flavor sensation: Burnt Ends Brisket Hash! Beef Brisket Burnt Ends Hash with White Cheddar Fondue and Pickled Jalapeños from the Smokehouse Outdoor Kitchen I was excited to see the dish at the Flower and Garden Festival. Hash is having kind of a moment (it’s that whole retro thing), and we absolutely loved the Nueske’s® Pepper Bacon Hash featured at Farm Fresh during last year’s Epcot Food and Wine Festival. The dish is both delicious and thrifty: it’s a great way to use up those “burnt ends” that result from low and slow smoked brisket. So if you find yourself barbecuing Texas-style — and really, who doesn’t?? — then give this one a try to use up leftovers. Personally, they had me at White Cheddar Fondue. Burnt Ends Brisket Hash with White Cheddar Fondue and Pickled Jalapeño PeppersSmokehouse Outdoor Kitchen Serves 4-6 Ingredients: Pickled Jalapeño Peppers: 1/2 cup thinly sliced white onion 1 cup sliced jalapeño peppers 1 cup white vinegar 3/4 cup water 3 tablespoons sugar 1 tablespoon salt 1 tablespoon black peppercorns 1 dried bay leaf 1 clove garlic 1 teaspoon coriander seeds White Cheddar Cheese Fondue: 1 tablespoon butter 1/4 cup diced onions 1 tablespoon all-purpose flour 1 1/2 cups heavy cream 1/4 teaspoon salt 1/8 teaspoon ground white pepper 1/8 teaspoon nutmeg 1/8 teaspoon hot sauce 1 cup shredded aged white cheddar cheese 1/2 cup shredded mozzarella cheese 2 tablespoons diced jalapeño pepper Burnt Ends Brisket Hash: 1 tablespoon canola oil 1 medium white potato, diced 1/2 cup diced white onion 1/4 cup diced celery 1/4 cup diced poblano peppers 2 tablespoons diced jalapeño peppers 3 cups cubed smoked beef brisket 1/2 teaspoon salt 1/2 teaspoon black pepper Instructions: For Pickled Jalapeño: 1. Place sliced onions and jalapeños in a medium-sized glass bowl. 2. Combine white vinegar, water, sugar, salt, black peppercorns, bay leaf, garlic, and coriander in a small saucepan. Cook over high heat until mixture boils. 3. Pour brine over onions and jalapeños. Cover and refrigerate at least 24 hours. For White Cheddar Cheese Fondue: 1. Melt butter in medium saucepan over medium heat. Add onion and sauté 5-8 minutes, or until onions are translucent. 2. Add flour, stirring constantly, for 3-5 minutes. Do not allow mixture to brown. Add cream, salt, white pepper and nutmeg. Cook over medium heat, stirring constantly, 5 minutes, or until simmering. Reduce heat to low and simmer, stirring occasionally, 20-25 minutes, until mixture is thick and coats the back of a spoon. 3. Add hot sauce. Slowly add cheese, stirring constantly, 3-5 minutes, until cheese melts and is creamy. 4. Add diced jalapeño peppers. Keep warm until ready to serve. For Burnt Ends Brisket Hash: 1. Heat canola oil in a large sauté pan over medium for 5 minutes, or until oil is shimmering. 2. Carefully add potatoes. Cook potatoes over medium heat, stirring occasionally, 6-8 minutes, until potatoes are golden and cooked through. 3. Add remaining vegetables. Cook 3-5 minutes, until softened. Season with salt and pepper. To serve: Evenly divide burnt ends brisket hash among plates. Top with white cheddar cheese fondue. Garnish with pickled jalapeño peppers. So delish! Opening May 22 as part of the Disneyland Resort Diamond Celebration, the spectacular new “Paint the Night” parade will feature some of the most innovative floats, vibrant costumes, dazzling special effects, unforgettable music and energetic performances ever presented at Disneyland Resort. The Entertainment team has been working around the clock to get the “Paint the Night” parade ready for its big debut. Today, we’re pleased to offer you a glimpse at one of our performer rehearsals with the Fiber Fairies from the opening unit and the Cars Crew, who join Mack Truck and Lightning McQueen. Once everything comes together, these talented performers will become an integral part of the show. The music for the “Paint the Night” parade, a bit of which can be heard in the video, features the wonderful tune, “When Will I See You Again,” by the band Owl City. The song gives a great, contemporary sound to this new, state-of-the-art nighttime parade. And when you see “Paint the Night” in person, be sure to listen closely.   21. Over the past year, The BOATHOUSE: Great Food, Waterfront Dining, Dream Boats has been hoisting up along the Downtown Disney skyline. The venue, open today, is the first of several new restaurants coming to The Landing, a new neighborhood that will be part of Disney Springs. The BOATHOUSE is an upscale waterfront dining experience showcasing steaks, chops, fresh seafood and a raw bar. Built over the water, the 600 seat nautically themed restaurant also features a display of rare dream boats from the 1930s – 1950s, a beautifully crafted water taxi and a fleet of amphibious autos, called Amphicars. I had the chance to talk with Theron Skees, executive creative director for Walt Disney Imagineering to learn more about how The BOATHOUSE charted its course. Theron shared “It’s been such a team effort between WDI and the Schussler design team; to see Steve’s dream come to life is awesome. It’s been a true collaboration. Guests will experience rooms that represent different time periods in the history of the building, with a focus on a view of the water. Each design element: the height of the restaurant ceiling, the width of the deck, the transparency of the railing, it was all considered so guests would have maximum visibility to the water.” I got to tour The BOATHOUSE recently, and if stunning water views and impeccable attention-to-detail were what they were aiming for, well, they nailed it! Earlier today, Pam Brandon shared details on the menu, so now I’m giving you an early look at what else you can expect at this unique location: Amphicar Rides – Is it a car? A boat? Yes. And yes! Guests can experience the thrill of a Captain’s guided tour aboard a rare Amphicar that drives on land and floats in the water. The $125 price tag includes your own Car Captain and seating for up to three guests. Along the way, you’ll have a great view of Downtown Disney, direct from the water. I tested the Ampihicars last week and had a blast; you literally drive into the lake with a splash – plus, I felt like a celebrity, waving to all the curious guests onshore! This is the only place in the world to ride in these vintage vehicles. Tours are available daily from 10 a.m.-10 p.m., weather permitting, and will be available soon. Italian Water Taxi Cruise – The Venezia, a breathtaking 40-foot wooden Italian Water Taxi also offers a Captain’s guided tour of Downtown Disney; this one is complete with live music, chocolate-covered strawberries and a champagne toast. Tours will be offered hourly from 10 a.m.-10 p.m., weather permitting, starting soon, for individuals and groups of up to 20. The cost is $75 per person or $50 per child under age 13. (Want a more private tour for two? Ask about the Antique Steamboat Tour aboard Lady Rose; the cost is $150 per couple.) “Floating Art” – I knew they were beautiful, but I had no idea I was looking at a multi-million dollar fleet of rare boats. Gathered from museums, private collectors, and boat shows from around the world, be sure to take some time to stroll the marina. Photos are not only allowed, but encouraged, so have your camera handy. Interior Décor – Boat motors mounted on the wall. Trophies from regattas of days gone by. Stunning photography and artwork, some historical, some richly modern. It’s all incredible. But perhaps my favorite décor element is the brand-new boat that the team modified so it could include a dining table. (I’ll just say it now, everyone will want to sit there, me included!) Of course, the true visual hero, even from inside the restaurant, is the water. The good news is that every single table has a great view, so there’s no such thing as a bad seat. Entertainment – Harbor Master festivities take place throughout the day and evening, with flag ceremonies and lively musical performances of beloved bugle songs, performed aboard Lady Rose. Inside, live entertainment takes center stage with a variety of musical styles – during my “sneak peek,” familiar songs were floating through the restaurant.   24. I always enjoy visiting Disney’s Fort Wilderness Resort & Campground, especially with my son. It’s such a peaceful place that it always feels as if we’ve been transported a million miles away. Not to mention it’s a great place to watch the horses at Tri-Circle-D Ranch. Check out this shot from photographer Mark Willard of the resort just waking up for the day. I can’t wait to visit again.
