  1. Like Olaf, I’m a big fan of summer. However, like you, I also enjoy experiencing “Frozen” fun all year long. That’s why I’m thrilled to announce the introduction of the newest location to the Downtown Disney District, Elsa & Anna’s Boutique. Currently home to Studio Disney 365, this location will undergo a transformation starting September 2, and will re-open in mid-September. I’ll be back soon with details on the new transformations, inspired by beloved characters like Anna, Elsa and Olaf, as well as details on some of the product offerings that will be available. In the meantime, here’s a look at the art for the logo that will grace this “cool” new location. Here are a few other things to prepare your crew for if you are planning to visit the Disneyland Resort this Halloween. Set sail in the direction of Halloween Carnival at Big Thunder Ranch Jamboree from September 12 through October 31! Here, a world of themed offerings await you, including special Halloween entertainment and activities, pumpkin carvers, yummy treats and the return of The Pirates League. Recruits three and older can chart their own course, choosing from a selection of pirate-inspired looks that are both swashbuckling and spooky. Now, Halloween Time wouldn’t be same without a little help from our Fairy Godmother, or in our case our Fairy Godmothers-in-Training at Bibbidi Bobbidi Boutique. Keeping with their simply sweet tradition, we welcome back the Halloween Minnie Mouse-inspired transformation through October 31. Just a quick reminder, transformations at Bibbidi Bobbidi Boutique in Fantasyland at Disneyland park are only for our younger fans, ages 3 – 12 years. Quick Tip: Bibbidi Bobbidi Boutique will offer extended operating hours on Mickey’s Halloween Party nights for any Trick-or-Treaters in need of a royal transformation. So if you are planning a visit to the Disneyland Resort to take part in some of these festive Halloween Time experiences through October 31, or if you can’t wait to check out the newly-transformed Elsa & Anna’s Boutique and take part in new experiences they will have to offer, call 714-781-STYLE (7895). For those of you planning a trip to the Walt Disney World Resort this Fall, be sure to make your appointments for Bibbidi Bobbidi Boutique at Magic Kingdom park or World of Disney Store in the Downtown Disney Marketplace, as Halloween packages will go fast.   3. The Marketplace Co-Op has been open in Downtown Disney Marketplace at Walt Disney World Resort for a few months now. I’ve loved hearing from guests about their visits to this exciting new location that serves as a testing space for new retail shop concepts, products and guest experiences. With fall approaching fast, I recently visited Zoey & Pickles, which is one of the boutiques found inside this location. The merchandising team recently reset the location to create a colorful new display. Zoey & Pickles is a girls’ destination that contains the latest trends and glamour for the up-and-coming fashionista. The boutique carries a variety of apparel items and accessories that were created especially for the shop. The thing I noticed immediately is that everything in the shop is now organized by color (it’s exactly how I organize my closet at home). The merchandising team said they made the change so guests could easily find their favorite colors to create fun outfits. Colorful shoes are one of those unique items that were specifically made for the location. They range from sandals to flats to sequin–covered high tops. In addition to the giant wall of shoes, the teams added select shoes to the various wall displays. That small addition makes it easier to find the perfect shoe to complement an outfit. The shop carries a few different items with characters like Tinker Bell or Buttercup from Disney•Pixar’s “Toy Story 3.” You’ll also find a variety of products featuring Mickey and Minnie Mouse. My favorite items in the shop are the shirts that contain power words as seen in the first image of this story. I encourage my daughter to live her life with those simple words – be kind, be magical, and be beautiful.   4. Today I’m sharing the last recipe in our summer series. I hope you’ve enjoyed learning how to make some of your favorite Disney Cruise Line dishes. Like many of the recipes I’ve shared this summer, our tomato salad is easy to make, yet it has so much flavor. Simply slice the ingredients, mix the dressing and chill the tomatoes before serving. It’s a unique salad – perfect for the summer – that is sure to impress your dinner guests! Check out the full recipe below and download our keepsake recipe card here. Enjoy! Tomato Salad Serves: 4 Skill Level: Easy Time: 30 minutes Ingredients 5 beefsteak tomatoes (¹/³ slices)4 shallots (finely chopped)2 tbsp. curly parsley (chopped)2 garlic cloves (crushed)½ tsp. ground black pepper1 tsp. dijon mustard¼ cup sherry vinegar¾ cup olive oil1 tbsp picked flat parsleyFor the Tomato Salad Place the dijon mustard, garlic and sherry vinegar into the bottom of a mixing bowl. Gradually pour and whisk in the olive oil. Add the parsley, shallots and pepper. Set aside. Lay the sliced tomatoes on a serving platter and chill.Just before serving, pour the sherry vinegar dressing over the tomatoes.Garnish with a sprig of flat parsley.   5. It’s time for another fun addition to our Disney Food Galleries! We just love to share photos of all of our favorite foods — and collect them into galleries for easy viewing! Whether your craving is for popcorn, ice cream, or a cupcake, there’s a gallery for you! And today, we’re introducing a brand new gallery for all of you red meat lovers out there! Yep, we’ve gathered a whole buncha steaks from around Disney World to help you make your choices on your next visit. Remember, some of these may drop off menus from time to time or have side dishes or preparation changed, but hopefully this will give you a good overview of what’s available! Here we go! Yachtsman SteakhouseYachtsman Steakhouse at Disney’s Yacht Club is one of my top picks when it comes to steak at Walt Disney World. After all, they decorate with meat — the first thing you pass en route to your seat is the Steak Trimming Room! Chefs here pride themselves not only on the very best cuts of meat, but appetizers, side dishes, and desserts inspired by market fresh ingredients. Yachtsman combines the very best of seasonal flavors with the traditional steak experience. My absolute favorite pick at Yachtsman is the 16-ounce Boneless Ribeye. It is always a melt-in-your-mouth choice. Ribeye with Herb Fries at Yachtsman Steakhouse But we are also big fans of the 12-ounce Prime New York Strip Steak, served here with a rich potato gratin stack. 12-ounce Prime New York Strip Steak Shula’sShula’s at Walt Disney World’s Swan and Dolphin is the kind of place that you think of when you envision an upscale steakhouse. As your eyes adjust to the dim lighting and you check out the menu — printed on a football! — you’ll settle into the refined elegance of your surroundings. When I have the chance to dine here, I almost always go for my favorite, the 22-ounce Cowboy Ribeye (are you sensing a theme?). The Bone-in Steak has been excellent on every visit. The flavor is unbelievable! 22-ounce Cowboy Ribeye Looking for a lighter approach to soothe your carnivore cravings? We’ve also enjoyed the Steak Mary Anne. Delicate by steakhouse standards, the 5-ounce medallions are served with a simple demi glace in this case. It’s the perfect plate for the guest who prefers all the flavor of prime, aged beef in a smaller serving. Steak Mary Anne Flying FishIf you’re a landlubber like me, then finding a great steak at a restaurant known for fabulous seafood is a dream come true. But it’s not impossible if you’re dining at Flying Fish Cafe. When I visit, I always order the Char-Crusted Black Angus New York Strip. The creamy Sauce Foyot is such a great accent — and they’re never chintzy with it! Char-Crusted Black Angus New York Strip Can’t decide between surf and turf? You don’t have to! Try the two house specialities side by side with the Entree Duo, which features the Char-Crusted Angus New York Strip Steak and the restaurant’s most famous fish dish, the Potato-wrapped Red Snapper. Entree Duo of Red Snapper and Strip Steak JikoJiko offers some of the most interesting food at Walt Disney World. And while I enjoy the fusion of African, Indian, and Meditteranean flavors when it comes to appetizers and desserts, I rarely deviate from my favorite entree: the Oak-Grilled Filet. Oak-Grilled Filet with Mac and Cheese And even when their delicious Mac and Cheese isn’t featured as the dish’s side, you can usually score it as a special request (and I totally recommend that you do). Liberty InnIn the mood for steak with no Advance Dining Reservation? Then head to Epcot’s Liberty Inn. Their New York Strip Steak, served with Red Wine Butter, Roasted Potatoes, and Steamed Broccoli, is surprisingly good. New York Strip Steak Meal Sci-Fi Dine-In RestaurantEven though most of my favorite steaks at Disney World are featured at signature restaurants, that doesn’t mean you can’t find a good option at moderately priced restaurants, too, like Sci-Fi Dine-In. Recently, I was pleasantly surprised by the Flame Broiled New York Strip here. The tasty cut was tender and topped with an incredible Blue Cheese Butter! Maybe it’s just the romance of dining in a convertible under faux stars. Nah…it really is fantastic. Flame Broiled New York Strip Steak Le CellierYou knew I’d get to Le Cellier, right? The tiny restaurant located in Epcot’s Canada Pavilion has become increasingly popular and pricey over the last few years. But Le Cellier’s famous Filet has been a must-have menu item in my book for years. In the past, it has always been served with Mushroom Risotto and Truffle Butter Sauce. Le Cellier’s Famous Mushroom Filet But in keeping with its identity as a Signature Restaurant, Le Cellier has taken to fiddling with the dish. On my recent visit, the Filet was served with Spinach Risotto, Smoked Bacon, and a Parmesan-Butter Sauce. I was prepared to be disappointed — but…it was as good as (if not better than!!) the original! I can’t wait to have it again! Le Cellier Filet with Smoked Bacon, Spinach Risotto, and Parmesan-Butter Sauce If your tastes run to Ribeye, check out their Bone-In version, served with a flavorful Compound Butter. Bone-In Ribeye Their Angus New York Strip also wins rave reviews. Canadian Prime New York Strip with Potato Pave Kona CafeA great steak is just a monorail ride away when you dine at Kona Cafe. Fusion flavors inspired by the Polynesian Islands Asian cuisine bring a special flair to dishes here. As a bonus, you can have steak for breakfast, lunch, and dinner here if you’d like! Start your day off with one of our favorite morning meals — Steak and Eggs! Steak and Eggs We love the Grilled Teriyaki Steak at lunch, served as part of the Polynesian Plate Lunch with Pineapple Salsa and sides of Sticky Rice and Pasta Salad. Grilled Teriyaki Steak For dinner, they also feature a delicious New York Strip Steak accented with a Molasses Bacon Butter. Many folks feel that it’s one of the top steak options in all of Disney! The Wave…Of American FlavorsAnother moderate restaurant featuring a delicious steak option is The Wave…Of American Flavors at Disney’s Contemporary Resort. The Wave emphasizes farm fresh fare and seasonal ingredients, so you’re likely to see different sides and accompaniments during your visit. But I’ve always enjoyed the Grilled Beef Tenderloin here when I’ve ordered it! While the size is a little smaller than many Disney restaurant servings, I found it to be perfect. Grilled Beef Tenderloin Mama Melrose’s Ristorante ItalianoUsually, when I dine at Mama Melrose’s Ristorante Italiano in Disney’s Hollywood Studios, I enjoy the Italian specialities that this quaint restaurant is known for. But on a recent visit, I discovered they serve a pretty fantastic steak! OK, I’ll be honest — this is one of my new favorite steaks in Disney World, hands down. I dream about this thing. And the fact that their Charred Strip Steak is currently served with a baked Five Cheese Macaroni. I’m jealous of anyone who gets to eat this. Charred Strip Steak Boatwright’s Dining HallChances are that you haven’t even heard of Boatwright’s Dining Hall if you haven’t stayed at Port Orleans Riverside. But believe me when I say so: it’s worth the trip just to dine here. And my very favorite dish among many standout items is the Slow-Roasted Prime Rib. Prime Rib straddles the fence between a roast and a steak. But since I usually find it on classic steakhouse menus, I’m including it! There’s nothing particularly unique about this version. It’s just a quality cut of meat, roasted perfectly, and served with perfect sauces and side dishes. How can you go wrong with roast beef, potatoes, jus, and creamy horseradish? It’s the best we’ve ever had — anywhere, actually. Slow-Roasted Prime Rib Teppan EdoWho doesn’t love a trip to a Japanese steakhouse? And when you’re actually in Japan — Epcot’s Japan, that is — you can enjoy the teppanyaki experience at Teppan Edo. I enjoyed the Nihonbashi, or Steak and Chicken Combo, the last time I dined here. Asakusa, a combination of Steak and Shrimp, is another red meat option. So good — and it’s always fun to watch the talented hibachi chefs at work! Upgrade to filet to get one of the most tender steaks you’ve ever had. Steak and Chicken Beef purists can also enjoy Filet Mignon served solo with traditional Rice and Vegetables. CitricosLooking for a good date night spot? You’ll love the bright, elegant ambiance of Citricos at Disney’s Grand Floridian Resort and Spa. When we have occasion to dine here, there’s always a fight over who gets to order the steak! In the past, it’s been an Oak-Grilled Filet of Beef that was so delicious, it led to fork fights. Oak-Grilled Filet of Beef These days, we hear they are featuring an Oak-Grilled Rib-Eye Filet of Beef. Hmmm. We may need to look into this. Narcoossee’sNarcoossee’s at the Grand Floridian is another Disney restaurant well-known for impressive seafood dishes. And the view of Wishes across Seven Seas Lagoon is stunning. But they have a lovely steak option for those among us who aren’t in love with fish. The last time we dined here, my husband and I both ordered the Filet Mignon! It was for the best. This way, we didn’t have to fight over it! Filet Mignon If you’re in a truly extravagant mood, try the Butter Poached Lobster with Your Filet Mignon! You can order your Lobster Tail steamed. But…why? Filet Mignon and Butter Poached Lobster Tail Artist PointArtist Point at Disney’s Wilderness Lodge is well-known for their Cedar-Plank Roasted Salmon and exotic selections, like Buffalo, Venison, and Game Sausage. But they also serve a lovely Grilled Center Cut Filet Mignon. Grilled Center Cut Filet Mignon Hollywood Brown DerbyIt took me a while to try Hollywood Brown Derby at Disney’s Hollywood Studios. But when I finally did, I was in love instantly! I have enjoyed their Charred-glazed Filet of Beef again and again, especially when they serve it with butter and a big ol french fry on top! Charred-glazed Filet of Beef California GrillWe love California Grill at Disney’s Contemporary Resort for its sweeping views. There’s no better place at Disney to take in a sunset — or watch Wishes at Magic Kingdom! Chef Brian Piasecki enjoys changing up sides and sauces, but the Oak-Fired Filet of Beef remains a popular menu favorite. Oak-Fired Filet of Beef A departure from traditional steak options, guests also love the Seared Bison. Seared Bison Monsieur PaulAt Monsieur Paul in Epcot’s France Pavilion, you’ll also find Filet Mignon. But this signature dining spot offers its own twist on the tender cut of meat. The Filet de Boeuf Grillé Forestier comes topped with a crust made of Pureed Mushrooms. Reminiscent of Pâté in consistency, it distinguishes this dish from other steaks that you’ll find throughout Disney World. Filet de Boeuf Grillé Forestier Coral Reef RestaurantWe talk so much about the World Showcase restaurants in Epcot that sometimes it’s easy to forget Coral Reef Restaurant in Future World. While fish and seafood are certainly on the menu, lots of folks head here for the Grilled New York Strip Steak. Grilled New York Strip Steak San Angel Inn RestauranteIf you enjoy your steak with a bit of Mexican flare for good measure, you might want to check out San Angel Inn Restaurante in Epcot’s Mexico Pavilion. The Carne Asada platter features a New York Strip Steak served with Cheese Enchilada, Black Refried Beans, and Mexican Rice. Carne Asada La Hacienda de San AngelAcross the way, La Hacienda de San Angel offers a mixed grill that includes steak as well. Featuring Sirloin, Chicken, Chorizo and Veggies, La Hacienda Parrillada includes a little something for everyone! La Hacienda Parrillada – Sirloin, Chicken, Chorizo and Veggies Be Our Guest RestaurantDinner at Be Our Guest Restaurant in Magic Kingdom’s New Fantasyland is a memorable experience. I mean, how often do you get the chance to dine in an enchanted castle? The Grilled Strip Steak here is one of my favorite menu items! Grilled Strip Steak Grand Floridian CafeYou can find another great steak on the Magic Kingdom Monorail loop at the Grand Floridian Cafe. This is a great option when you don’t have an advance dining reservation, but you’d like to enjoy a relaxing lunch. The Char-Crusted New York Strip Steak is the steak du jour right now. Char-Crusted New York Strip Steak But from time to time, guests may also find this lovely Ribeye on the menu. When last we had it, there was a bit too much sauce for my liking, but it was still fantastic and cooked perfectly. Grand Floridian Cafe Ribeye with Steamed Vegetables and Fries Splitsville Luxury LanesSplitsville Luxury Lanes at Downtown Disney offers steak lovers a couple of fun ways to enjoy their favorite entree. Fans of tenderloin will love the buttery Filet Sliders! Filet Sliders But if you like steak as an accent with other foods, you may want to try the hearty Steak Fajita Rice Bowl. Steak Fajita Rice Bowl And there you have it! Some of the best steaks that money — or Disney Dining Plan Credits — can buy in Disney World! There’s no shortage of amazing steaks at Disney.   6. There’s a change in the air and it’s just not back to school, cooler temperatures and changing leaves. It is the dawn of a new era in college football, and the chance for college cheer and dance teams to cheer their Disney Side to support their team and win a $100,000 grant for their spirit program and a group trip to Walt Disney World Resort in Florida. This fall, Disney is teaming up with ESPN and the ABC family of networks to cheer on the new College Football Playoff system and what is sure to be the most memorable college football season yet. Every team starts the season “in,” but only four teams will stay “in” for the inaugural College Football Playoff in January on ESPN. The competition is not just limited to the player on the field. ESPN, in partnership with Disney Parks and Varsity Spirit, is excited to invite college cheer and dance teams to create a 30-second Disney Parks-inspired routine set to four music remix choices of our favorite Disney Parks attraction music. Teams can submit their routines between September 3 – November 10, and the top 4 will be announced on December 11, during a live ESPN broadcast of a College Football Special from Disney’s Boardwalk Resort immediately following the College Football Awards Show. And if you don’t want to take my word for it, stop by the runDisney booth at a health and fitness expo and witness the line of people waiting to meet and get advice from this running legend. runDisney fans know Galloway as the training consultant for runDisney. His Run-Walk-Run method is credited for getting thousands of people off the couch, running and crossing finish lines at Disney and races around the world. His warm southern charm combined with his passion to help every runner succeed, makes him adored by all who come in contact with him. Galloway’s professional running career is historic and well documented. Running alongside Steve Prefontaine and Frank Shorter, he was a member of the 1972 Olympic Team in Munich, Germany. His extraordinary running resume includes winning the inaugural Peachtree Road Race 10K in Atlanta, winning the Atlanta and Honolulu Marathons, and a 7th place finish in the Boston Marathon. One might think an athlete with those credentials is unapproachable and incapable of relating to the average runner, however with Jeff Galloway, those preconceived notions are far from the truth. With his competitive juices evaporated like the sweat from the thousands of miles he has logged, Galloway is committed to helping all of us become better runners and achieve our goals. “What I have discovered is I get a whole lot more back in helping another person than I ever got in doing this for myself,” said Galloway. “I’m one runner trying to help another runner and that gives me tremendous joy.” Practicing what he preaches, Galloway uses the Run-Walk-Run method in all of his races.   15. In true Disney fashion, look for a big wow at the new Capt. Cook’s at Disney’s Polynesian Village Resort – the menu makeover brings island-style cuisine to the popular quick-service spot that’s open around the clock. Start with the classic lobster roll served on a buttered bun. They’ve added blackened fish tacos, a noodle bowl (beef or shrimp) and delectable coconut curry meatballs. A new gourmet hot dog is slathered with garlic ketchup and mango relish. And our favorite – crispy fried chicken and waffles, a hearty breakfast favorite that stays on the menu all day. No worries, the favorite hot beef ‘n blue sandwich stays, says Chef Pete Bruenen. Ditto for the pizzas, grilled chicken sandwich and house-made sushi, delivered from Kona Island upstairs. The grab ‘n go case stays filled with drinks, salads, sandwiches and the popular cold noodle salad and turkey club, says Chef Pete. Fans of the breakfast Tonga Toast will still find it on the menu, along with a new breakfast burrito with egg, bacon, potatoes and Cheddar cheese. Bridget Sherren, operations manager for Food & Beverage at Disney’s Polynesian Village Resort, shared a little news about Pineapple Lanai, opening the end of August. “Dole Whip gets its own dedicated spot,” she says, a new window in the courtyard for Dole Whip soft serve and floats (pineapple or vanilla Dole Whip). “It’s a great spot for families,” says Bridget. Another new treat is Hawaiian shaved ice at Kona Island on the resort’s second floor. Located just off the monorail, Kona Island serves specialty coffee and pastries all day, and now shaved ice joins the lineup, along with takeout sushi. Hours are 6:30 a.m. – 12 p.m. and 5 – 10 p.m. And watch for Trader Sam’s Grog Grotto to open in spring 2015 next door to Captain Cook’s. Details soon! New Capt.   17. It’s quite the whirlwind of activity around the Polynesian lately! Learn About: Captain Cook’sPolynesian Resort Disney World RestaurantsConstruction continues to affect the lobby, the Nanea Volcano pool, and the entrance of the resort… not to mention the recent name change back to Disney’s Polynesian Resort Village. Slowly but surely, some results of all that work are starting to be seen, beginning with the newly reopened Captain Cook’s: the Polynesian’s Quick Service location. We gave you a tour of the temporary location when Captain Cook’s refurbishment began in April, and now we’re excited to share the results of the past four months with you! Say “Aloha” once again to Captain Cook’s! AtmosphereThe entrance feels very familiar… mainly because it’s the same . Entrance to Captain Cook’s Captain Cook’s sign In fact, though, the entire location feels familiar since most changes are cosmetic (with a few exceptions that we’ll explore a little later). If you’ve visited Captain Cook’s before, you’ll still know exactly where to go. Upon entering, you’re greeted by the main dining area. Captain Cook’s main dining room Captain Cook’s main dining room The breezy, palm-trees-swaying vibe has changed to a darker color palette, which is offset by two things: attractive light wood flooring and super fun vintage travel “posters.” Samoa and Niue posters Bora Bora poster Tokelau poster Tonga poster The one thing competing for your attention with the artwork are the light fixtures on the ceiling. These ones kind of remind me of the type now hanging in Tangaroa Terrace in the Disneyland Hotel. There’s also a  nod to the old Captain Cook’s palm tree decor in the old ceiling fans. Windows To your right is where the culinary magic happens… because that’s still where you get your food ! This is also where a few of those functional changes come into play. Entering the ordering area Gone are the touchscreen ordering kiosks, and in their place is a stand where you speak to a Cast Member to place your order (we’ll get to those eats in the next section!). Ordering counter You’ll still receive a receipt and a buzzer, and you’ll still move to the left to pick it up. The major difference here is that the bakery/pastry case is no longer there. Pick-up area Instead muffins, pastries, chips, whole fruit, and other grab and go snacks can be found under the menus. Grab and Go Meanwhile, cold cases line the farthest wall, where you can grab bottled beverages, cold fruits and veggies, salads, yogurt, and the like. Cold grab and go Cupcakes (now individually packaged with ingredient lists) are still available, but on the day I visited the case had yet to be completely filled, so I’ll definitely be curious to see what populates those bottom shelves. Cupcakes Have you noticed what’s missing on this wall? Of course you have! The Dole Whip Machine is gone. But it’s on the way friends, don’t worry! You’ll be able to order up your Dole Whips at the Polynesian once more when the all-new Pineapple Lanai opens at a later date (unconfirmed, as of yet). Cash registers remain in the center of the ordering area (be sure to keep those receipts on you so the Cast Member can ring you up easily!). Beverage station The smaller seating area on this side caught the new vibe, too, with the new light fixtures and similar table seating. EatsClassic Disney starters including Mickey Waffles and the Bounty Platter can be found on the Breakfast Menu, as always. Of course, no morning trip to the Polynesian is complete without Tonga Toast, which – naturally – is still here . Breakfast Menu Kids’ Breakfast Menu The lunch and dinner menu is available each day starting at 11:00 am. Long-time favorites such as the Aloha Pork Sandwich, Pulled Pork Nachos, and a variety of flatbreads have returned. And we were curious to see what – if anything – would be new on the menu, and now we have our answer. Noteworthy new items include Fish Tacos, Coconut Curry Meatballs, a Lobster Roll, and Chicken and Waffles. Lunch and Dinner Menu Lunch and Dinner Menu Lunch and Dinner Menu But allow me, please, to collect myself as I mourn the loss of the Grown-up Grilled Cheese. (That said, I’m wondering how the Grilled Ham and Cheese compares? I don’t know yet. I didn’t order it as part of my silent protest.) Okay, moving forward! I’d wanted to try the Coconut Curry Meatballs since they showed up as Thai Coconut Meatballs on the temporary menu, and was also curious about the Fish Tacos. But since nothing says “Aloha” quite like Chicken and Waffles (?!?), I just had to get those, too! I’ll walk you through in the order I tried them, starting with the Chicken and Waffles. The description on the menu informs you that these are Crispy Buffalo Chicken Fritters on a waffle topped with Romaine and Ranch dressing. Chicken and Waffles Knowing that, I expected a bit of that spicy bite typically associated with Buffalo Chicken, and I wasn’t disappointed. Personally, I much prefer Ranch to cut the spice over Blue Cheese, so this combo worked for me. Chicken and Waffles The waffles themselves reminded me of the cute little Sweet Potato Cinnamon Waffles at the Flower and Garden Festival from a size perspective, but I have to admit that I was expecting a larger portion. I’d figured that I’d had my spice for the day, but I didn’t realize what was coming: introducing Fish Tacos. Fish Tacos Here’s the thing: I like to think that I’m able to handle some heat, but I was completely unprepared for this. From the first bite, the heat seriously blew me away. Unfortunately, I don’t mean that in a good way. I thought it my duty to try again, to at least attempt to tell you where the heat was coming from: the seasoning on the fish or the dressing on top of the slaw. The answer is: both. The fish had an immediate, strong heat when I bit into it. The dressing had a slower build but ended up higher in intensity and duration. I’d love to be able to tell you what the fish tasted like, but it was entirely overwhelmed by the spice. White fish in tacos May I propose a new name? These are Somebody-please-pour-a-gallon-of-water-in-my-mouth Fish Tacos, and the menu description should have a sign next to it saying, “For Heat Seekers ONLY… and even you might need to think this one over a bit!” Okay, I’ve calmed down now … Last – but absolutely not least – are the Coconut Curry Meatballs. Coconut Curry Meatballs The simple appearance might not be too exciting, but with this dish, I was blown away once more. This time, in a great way! At once fruity and spicy (ginger-spicy; not, you know, Fish Taco spicy ;)), and pleasantly creamy thanks to the coconut milk, the sauce is the perfect complement to the meatballs. I’m a curry fan, but honestly couldn’t detect a strong curry – just a hint. Meatball closeup And I know it’s just rice, but I’m often impressed with sticky rice at Disney – it’s usually pleasantly sticky without being congealed, and stays fluffy, which was the case here as well. Closeup of rice and sauce But even if the rice hadn’t been so good, I would have been happy with anything that helped me gather up all that yummy sauce. I’ll remain bummed about the Grilled Cheese, but the Coconut Curry Meatballs are my new go-to at Captain Cook’s. OverallI guess the reopening of Captain Cook’s has officially rung in the start of a new era at the Polynesian Village Resort! Yes, there’s a way to go. But this refreshed look at Captain Cook’s is quite promising, as are some of the culinary surprises within. I look forward to spending a little more time at the new Captain Cook’s.   18. This week, we introduced the newest member of the gorilla family troop at Disney’s Animal Kingdom and shared the first images of the little one with Disney Parks Blog readers. The new baby, which is yet to be named, is the fourth gorilla born at Disney’s Animal Kingdom as part of the Association of Zoos and Aquariums (AZA) Species Survival Plan, which manages genetic diversity among species through detailed records of individual animals. Check our original story for more details about our newest baby gorilla. And Gary shared a new group of fun Disney Park “light painting” images that included the galaxy’s most famous villain, Darth Vader. Just like our July post, the designs were made in midair (without a guide or template) and the art was captured using long camera exposures that captured every move of the penlights. There were no chances to “erase” a mistake. Keep an eye on the Disney Parks Blog for more “light painting” later this year.   21. Bonjour! We are taking a tour today of the Culinary Capital of the World — France — as we continue to gear up for the 2014 Epcot Food and Wine Festival! Okay…well, that may be a little overkill. But there’s no denying that French food is something special. And we were very glad to hear that French Regional Lunches — aka Frunches — would return once more as part of the festival’s line up of Special Events last year after taking a hiatus in 2012. And they are back again in 2014! Woo!!! As we prepare for this year’s festival to kick off on September 19, let’s sit down to a French Regional Lunch from 2013. Join me, won’t you? AtmosphereThey’ve made the entrance door a little less secret-looking, but the entrance to Monsieur Paul is still a bit on the understated side. Head for Les Halles Boulangerie Patisserie and L’Artisan des Glaces, but make a sharp left at the awning. And you’ve arrived! Monsieur Paul Entrance Step inside and you’re greeted by a small waiting area and this elegant winding staircase that takes you up to the second-floor restaurant. (There’s also an elevator if you prefer.) That Gorgeous Staircase! Monsieur Paul is normally only open for dinner service, so it’s a real treat to enjoy lunch here in the recently renovated dining room. During the day, the natural light flooding through the uncovered windows lightens up the formal setting considerably. It’s a nice combination. There is no assigned seating, so arrive early if you have your heart set on a certain area of the restaurant. Tables are set close together, so it pays to be of a social frame of mind. Most of the time, people respect it if you would rather not chat with strangers. Don’t let this aspect of the experience keep you away. (And, honestly, after the fourth glass of wine, nobody’s a stranger anymore.) Atmosphere and Seating Arrangement You’ll notice in the photo above that there is a “host” for the luncheon. That’s because each luncheon is themed to a different region of France, and wines are paired to complement the flavors of each dish. A principle from a winery will guide you through each course and pairing. And speaking of wine, there will be lots of it. My advice? Pace yourself. Table Setting with Wine Glasses I’m excited to show you the menu — let’s get started. French Regional Lunch at Monsieur PaulTo me, the most interesting part of the French Regional Lunches is that they are just that — about different regions. Each week, they highlight a different region in France. During my luncheon, we were headed to Bordeaux! Menu for the French Regional Lunch — Click to Enlarge Our first wine was poured quickly after we were seated. The light-bodied Château Bonnet White Bordeaux was the perfect aperitif wine. It was excellent to sip on its own, but the crisp finish also paired well with our beginning dish, which was very rich. Château Bonnet White Bordeaux Speaking of, our lunch began with an Amuse Bouche. The creamy dish reminded me of a savory creme brulee, if that makes any sense. No sweetness, but the same rich consistency, with the earthiness of mushrooms. Amuse Bouche The peppery Arugula on top contrasted nicely with the creamy custard in the small starter. It certainly did its work — we were excited to see what would be next. Amuse Bouche — Inside Fresh Demi Baguettes arrived to the table next, baked in the ovens of Les Halles below. I’m a big ol’ fan of bread fresh from the oven, and they do it perfectly here. Fresh Baguette Our next wine was poured in anticipation of our first course. I thought the Château Bonnet Rosé was the perfect segue from the light white we started with into the heavier dishes that would be coming. Château Bonnet Rosé Our first course, Cassolette d’Escargot Cauderanaise — Escargot Cassolette with Bacon — was a twist on a classic. WhileEscargot is a favorite when dining in the France Pavilion, they were made even more fantastic by the addition of what seemed like metric tons of butter and cream. Totally decadent and completely amazing. Everyone at our table wanted seconds! Cassolette d’Escargot Cauderanaise — Escargot Cassolette with Bacon To prepare us for main course, we received a pour of the next wine — Château Tour de Ségur. Soft and round, this is an excellent, crowd-pleasing wine, and a great pairing for the dish that we were about to enjoy. Incidentally, the wines we sampled during this lunch were a good foray into French wines for the American wine novice. Not only did they demonstrate excellent variety, but in the case of the Château Bonnet selections, the varietals of the blends are printed on the label. It’s an enjoyable way to learn your French wine regions — read, then taste. Château Tour de Ségur Our main course was Magret de Canard Rôti, Pommes de Terre Douce, Petite Tourte de Queue de Boeuf — Roasted Duck Breast, Sweet Potato, and Oxtail Pie. I am a HUGE duck fan, and the Roast Duck was perfectly prepared. The Sweet Potato was simply roasted, and complemented the rich meat well. Magret de Canard Rôti, Pommes de Terre Douce, Petite Tourte de Queue de Boeuf — Roasted Duck Breast, Sweet Potato, Oxtail Pie It seemed a bit odd to me to have what amounted to two main courses side by side. But how could I complain about this? The Oxtail Pie was miniature, edible art. Oxtail Pie Peeling back the flaky layers of Puff Pastry revealed a rich stew. This is a specialty of Monsieur Paul’s. Oxtail Pie — Inside So far, so good. To lighten things up a bit, we enjoyed a small cheese course next. This, of course, also brought with it another wine pairing. Château Labastide Dauzac Red was another full-bodied red…which I failed to get a photo of. C’est la vie. Things were getting a little hazy at this point, after all. Our cheese plate was good, although I might have enjoyed something a little more interesting. Still, the semi-hard Emmental provided a nice counter point to the rich dishes that preceded it. Cheese Selection — Emmental But I couldn’t wait to sample dessert, which sounded pretty fantastic. The wine paired with our dessert course, J. Vidal-Fleury, Muscat Beaumes De Venise, offers a rich, honeyed sweetness that isn’t cloying, but matches beautifully to fruit-based desserts. J. Vidal-Fleury, Muscat Beaumes De Venise And that was a good thing, because next we were served a beautiful Clafoutis aux Cerises, Sorbet Citron — Cherry Clafoutis with Lemon Sorbet. Pretty, eh? Clafoutis aux Cerises, Sorbet Citron — Cherry Clafoutis with Lemon Sorbet I expected it to be somewhat like a cobbler, but it was far more rich and dense than that. In fact, the inside seemed more like Frangipane studded with Sweet Cherries. The tart Lemon Sorbet offered a perfect counterpoint. Cherry Clafoutis with Lemon Sorbet — Cross Section Replete with a beautiful meal and having consumed more wine than I normally do during the course of a month, I was more than ready for a stroll around World Showcase. OverallFrench Regional Lunches still maintain their sparkle. There’s a reason that they continue to be so popular. They are a true celebration of the cuisine and wines that they represent. They embrace and convey the spirit of what the Food and Wine Festival is all about — discovering the flavors of the world amid the magic of Disney. Plus, they’re a great way to spend an enjoyable afternoon with friends! If you’re up for treating yourself and you have a soft spot for French cuisine, I would definitely give a French Regional Lunch a try. Grab your spot soon, though — these sell out FAST.   23. Whether you are going to Aulani, a Disney Resort & Spa for the first time or making a return trip this August, here are a few key things you might want to keep an eye out for.   25. “Guardians of the Galaxy” has become a blockbuster hit with audiences all over the world enthralled by the thrilling cosmic adventure’s cast of characters and chart-topping soundtrack. “Awesome Mix Vol. 1,” a mix tape of retro-1970s gems given to Peter Quill by his mother, plays a key role in the story of “Guardians of the Galaxy.” Now a mysterious gang of villains has stolen that prized cassette, and Peter Quill – you may know him as the legendary Star-Lord – is on his way back to Earth on a mission to retrieve it. Meanwhile, we’ve learned that a “Guardians of the Galaxy” Awesome Mix Tape Dance Party is being planned as part of the “Villains Unleashed” event at Disney’s Hollywood Studios on August 23. Coincidence? Perhaps not. For those of you attending the event, be sure to duck into Stage 5 in the Animation Courtyard with your fellow Terrans, where the “Guardians of the Galaxy” Awesome Mix Tape Dance Party promises to be the hottest spot this side of Knowhere with an out-of-this-world DJ and other surprises.
