  1. It’s almost time! The Fifth Annual Walt Disney World Swan and Dolphin Food and Wine Classic is just around the corner! This event, which takes place concurrently with the 2014 Epcot Food and Wine Festival, is a fantastic evening for food and wine lovers. This year’s Food and Wine Classic will take place on Friday, October 31 (yep! Halloween!) and Saturday, November 1. The two-day event consists of food and beverage tasting booths set up on the resort’s beautiful causeway each evening. And new for 2014, a Beer Garden experience has been added for even more great food and drink. Guests can also take part in a number of special food and beverage seminars for an additional fee. Seminars take place at 4:30PM both days, and the Causeway booths are open from 5:30 until 9:00PM on Friday and Saturday. We’ve enjoyed the event every year since it began, and 2013 was no exception! We thought a look back at last year’s event was the perfect way to get excited about what’s in store for 2014. Let’s head out to the Causeway for a delicious evening. Dining al fresco on the Causeway at the Swan and Dolphin Food and Wine Classic! AtmosphereWhether you’re staying at the Swan and Dolphin or you’re arriving from another location, head to the Promenade that connects the two resorts — that’s where the evening’s festivities will take place. We stopped by the Will Call Booth to pick up tickets. As far as admission goes, you have options. Purchase an all-access ticket, and it’s an all-you-can-eat-and-drink pass to the booths. If you prefer, you can choose a la carte tickets instead, which are sold in books of 25. Will Call Booth The Check In Table provided us with handy plates and plastic wine glasses. Check-In Table These would come in handy as we juggled plates and drinks on the Causeway. Food and Wine Classic Tray and Glass Booths line the walkway leading from the Swan to the Dolphin as well as the path directly behind the Swan. There’s a lot to take in! The Promenade Hi-Top tables are scattered throughout the middle of the Causeway. You’ll also find large tables with chairs off to the side directly behind the Swan. High Top Table At the end of the Causeway closest to the Dolphin, a stage is set up for musical performance. While you sip and stroll, you can listen to live tunes! Stage In addition to the food and beverage booths, last year’s Classic featured a large retail outlet. Here, guests could purchase bottles of the wine we sampled. Wine Store Entrance There was also an assortment of logo wear and a few food items. Merchandise Display Food and Wine Classic T Shirt Logo Aprons It is a food and wine event, so expect to see lots of wine-themed merch here, like corkscrews and wine glasses. Corkscrews Glasses Even More Glasses In 2013, the Food and Wine Classic also had an emphasis on Breast Cancer Awareness, so there were a few retail items with the pink ribbon logo as well. Glasses with Breast Cancer Awareness Emblems Breast Cancer Awareness Merch And of course — wine! Like a particular bottle? Conveniently, you can find it for purchase so that you can enjoy it at home! Bottles for Purchase One of the most popular booths, Cib’s Smoke Shop, also had a few barbecue sauces and rubs available for purchase. Cib’s Smokehouse Sauces Cib’s Smokehouse Rubs and Sauces Soon, it was time to take up our plates and glasses and get started! Time to check out the spread. EatsNavigating the sea of white-tented booths is best done with a map! My recommendation? Get your bearings by taking a look at what’s available before you strike out. And pace yourself! Beverages and Drink PinkTo begin, there is a LOT of wine at this event. I mean a LOT. In 2013, there were 35 different booths, mostly comprised of wine. We tasted wines from all over California, Oregon, and Washington. The international wine community was well represented too, with booths highlighting wines from Argentina, Australia, Chile, France, Italy, New Zealand, and Spain. Wine Tents I had to snap a few pictures of my favorites! Chateau Ste. Michelle Mimi Chardonnay Francis Ford Coppola Claret In addition, there was a booth featuring Ty Ku Sake. Ty Ku Sake Booth Sake Beer lovers will want to head straight to the Beer, Please! booth, where a number of different craft beers are featured. Beer, Please Booth Craft Beers In 2014, the Food and Wine Classic has added a Beer Garden to its offerings. For an additional fee, enjoy access to Crescent Terrace, where more beer will be featured alongside freshly prepared food items, like German-style sausages and soft pretzels! In 2013, this area was “pinked out” in recognition of breast cancer awareness, and to celebrate those who have battled the disease. Pinked Out Terrace On offer were several rose wines to sample. A Glass of Rose for Drink Pink After a quick tour of the beverage booths, it was time to start sampling some food! Kimono’sKimono’s offers some of the best sushi available at Disney! It’s a fun spot for karaoke as well. Kimono’s Booth The Spicy Yellow Fin Tuna Roll on offer was fresh and delicious. Sushi Sushi — Up Close Cib’s Smoke ShopCib’s Smoke Shop is the handiwork of the Swan and Dolphin’s Executive Chef, Robert Ciborowski. Lines get long here for smokehouse specialties, handcrafted by Chef Ciborowski’s staff just for this event. Handcrafted Bacon, Black Eyed Pea Puree, Maple Fluid Gel Fresh Mediterranean MarketFresh offers quick casual dining with market fresh flavors inspired by the cuisine of the Mediterranean. Fresh Booth Their Blackened Fish Sandwich was served with Butter Lettuce, Tomato, Caramelized Onion, and was topped with a tasty Old Bay Remoulade. Blackened Fish Sandwich Fish Sandwich — Under the Bun Garden GroveOpen for Breakfast, Lunch, and Dinner, Garden Grove is your spot to enjoy Disney character dining at the Swan and Dolphin. Garden Grove Booth For the Classic, they served up what was possibly my most favorite dish of the evening — a fun riff on Fish and Chips! The dish came together with Beer-Battered Sustainable Bass; and in place of thick cut, fry-style chips, they served it with Vinegar Potato Chips. Fish and Chips So good! I am STILL thinking of this one, and I’m so excited to see that it’s back in 2014! Fish and Chips — Inside bluezoobluezoo is the brainchild of Celebrity Chef Todd English, and focuses on coastal cuisine and fresh seafood. Bluezoo Booth One of our favorite dishes on their menu is Shrimp and Grits. They reproduce the dish here on a smaller scale, and pair it with Pickled Okra and Organic Tomatoes. Shrimp and Grits Paired with a glass of Chardonnay and some Jazz — it was great! Shrimp and Grits with Wine PicabuPicabu is truly a hidden gem among Disney area eateries. No matter what time you’re working up an appetite, you’ll find this spot serving — it’s open 24/7! Picabu Booth The booth at the Classic featured a Taqueria for everyone — Corn Tortillas stuffed with your choice of Barbacoa of Beef, Braised Pork, or Organic Veggies. Tacos — Pork, Vegetable, and Beef After you choose your tacos, spend a little time at the garnish table, topping them with extra veggies, cheese, and an endless array of hot sauces! Garnish Table for Tacos Garnishes for Tacos I wanted to go back for seconds…and thirds. My Taco — Yum! FountainThe Fountain is one of our most favorite stops for homestyle food and killer ice cream treats. Their Caramel Apple Sundae is not to be missed! Fountain Booth During our evening at the Classic, they were offering a classic Lamb Gyro that featured Braised Lamb on a Toasted Pita with Tzatziki Sauce. The ingredients were fresh and it was the perfect three bites — enough to taste without filling up on it. Lamb Gyro Il MulinoIl Mulino offers guests delicious Italian dishes in an upscale atmosphere. It’s always fun to see what they bring to the Classic. Il Mulino Booth This time around, it was a delicious Ravioli with a buttery Yukon Gold Potato Filling garnished with Chanterelle Mushrooms, Truffle, and Charred Onions. It was a nice departure from traditional ravioli offerings. Ravioli Todd EnglishAs Chef and Owner of bluezoo, Celebrity Chef Todd English has had a presence at the Classic for the last several years, and he continued the tradition in 2013. In addition to the fun food at the bluezoo booth, we could also taste a few additional dishes crafted at the Todd English booth. Banner at the Todd English Booth Guests could choose from a Tuna Tartare dish (sadly, no picture of this one), or go with something even more exotic — an Oyster Shooter topped with Huckleberry Champagne Vinegar. The briny flavors of the oyster paired really nicely with the fruit and acid of the vinegar. Oyster Shooter Chef English also offered a Rock Shrimp Taco, garnished with Huckleberry Foam. I thought the handmade Corn Tortillas made the dish really special. Rock Shrimp Taco Cabana Bar and Beach ClubCabana Bar and Beach Club was one of the few booths offering a vegetarian option. Cabana Booth The Vegetarian Bao was a steamed bun with crisp tender Vegetables and a savory sauce. Vegetarian Bao While it wasn’t my favorite dish of the evening, I appreciated the attempt to offer something lighter; and it was really fun, watching the staff pull the buns out of bamboo steamers set up in woks right there. Vegetarian Bao — Inside Shula’s SteakhouseShula’s Steakhouse is one of the best spots in all of Disney when you’re craving a steak. We’ve enjoyed meals here many times, and we always have a great experience. So it will come as no suprise that this booth always draws a big crowd. Shula’s Booth You can nearly always bank on a “meat and potatoes” pairing here. Last year, it was Carved Prime Rib, Roasted Garlic Mashed Potatoes, and Horseradish Creme Fraiche. Really, how could you go wrong?? Prime Rib with Mashed Potatoes Pastries by Chef Laurent BranlardIf you’re after something sweet, head to the Pastry Booth, which showcases the talents of the Swan and Dolphin’s Executive Pastry Chef, Laurent Branlard, and his team. In 2013, Chef Branlard added an unexpected surprise to the assortment of pastries — Ice Cream Panini Sandwiches! Fans of L’Artisan des Glaces in Epcot’s France Pavilion will recognize these presses. They’re just like the ones that are used to make some of our favorite Pressed Brioche Ice Cream Sandwiches. Brioche Sandwich Presses The hot-meets-cold treat came in two flavors — Vanilla or Chocolate with Hazelnut Crunch and Raspberry Coulis. They were marvelous! Brioche Sandwich — Inside In addition to the sandwiches, guests could choose from an assortment of incredible sweets. Of course, I had to sample all three! My Pastry Plate The BLA Shot Glass consisted Blueberry Compote, Lemon Creme Fraiche Panna Cotta, and Almond Pound Cake. I love the combo of blueberries and lemon, so this was a hit for me. BLA Shot Glass Next, we sampled the Dome, a combo of Milk Chocolate Mousse with a Caramel Cream Center, a Hazelnut Dacquoise Sponge, and Milk Chocolate Glaze. Milk Chocolate Dome Finally, guests could also choose a Raspberry S’more. The beautiful two-bite dessert included Raspberry Marshmallow, Raspberry Compote, and White Chocolate Cream on a Cinnamon Sable Dough. So interesting! Raspberry S’more OverallStrolling the Causeway at the Walt Disney World Swan and Dolphin Food and Wine Classic is a fantastic way to spend a fall evening in Florida! 2. It’s Halloween week and we’re back at Magic Kingdom Park creating some amazing free hand “light painting” artwork in the air with colored LED penlights. Gallery13 Halloween-Inspired ‘Light Paintings’ at Magic Kingdom Park view allThe Hitchhiking Ghosts and our 12 other Halloween-themed “light paintings” were drawn without a guide or template during an after-hours park visit. Each image was drawn quickly and with skill by Matt Stewart, a Yellow Shoes Creative Group Art Director. And while Matt “drew” the art, Paul Chase, a Disney Parks Content Producer, used long camera exposures to capture each move of the penlight. Matt and Paul have used this same technique to create “light paintings” that featured the iconic profile of Mickey Mouse, an impressive American Flag in front of Cinderella Castle and the galaxy’s most famous villain, Darth Vader. Let us know your favorite “light painting” in the comments and keep checking the Disney Parks Blog for more light art at Disney Parks. 5. World Rhino Day is officially recognized each year on September 22, and provides a great opportunity to share information and raise awareness about the exponential rise in rhinoceros poaching in the wild. While some are aware of the declining numbers of rhinos in the wild, many don’t have the opportunity to take the next step to help reverse the decline. Chad Harmon, a member of the team who works with animals in the Ituri Forest on Kilimanjaro Safaris at Disney’s Animal Kingdom, took matters into his own hands. He and his wife started a non-profit organization called The Horns and Heroes Project – an organization that combines the conservation of rhinos around the world with the passion and creativity of the art community. The organization’s first event, in 2012, invited 50 artists from around the Orlando, Fla. area to decorate cast moldings of rhino horns. These decorated horns were then displayed at an auction event and 100 percent of the $6,000 proceeds were sent to the International Rhino Foundation. The ‘Heroes’ portion of the organization’s title comes in as the money donated supports the front line park rangers patrolling on the ground, risking their lives against armed poachers to keep rhinos safe in the wild. So, that covers rhinos and art auctions, but where does Disney Imagineer, Joe Rohde, fit in? This year over 70 artists decorated rhino busts that were auctioned off. Joe Rohde learned about the event and showed support by creating his own piece of artwork that was showcased along with members of the Orlando community and Disney’s Animal Programs. A Zoological Manager on the elephant team, Steve Lefave, created the piece of art that produced the highest bid – over $900! The piece, titled “Abbey Normal,” was created using several recycled pieces and depicts a “Frankenstein”-like rhino. When asked about his inspiration for the piece, Lefave said, “If we don’t protect the rhino, we will have to recreate it by some other means.” Lefave also spoke very highly of the organization with admiration that is “through the roof” because he knows all the work to save this species comes from the heart. Inspired by the guiding principles of Disney’s Animal Kingdom, Harmon strives to inspire calls to action by exposing audiences to the subject matter and then provide a way to get involved. Harmon’s intention is to invite art lovers to come in the door, but then leave an art lover who is also a conservationist. The most recent event raised over $23,000 with over 400 people in attendance! Organizations like this are just one way that Disney cast members are making a difference around the world. Keep an eye out for upcoming events in your area and opportunities to get involved in other conservation programs, organizations and initiatives! As Halloween approaches in just a few days, the party is already in full swing at Tokyo Disney Resort, where both Tokyo Disneyland and Tokyo DisneySea are hosting “Disney’s Halloween” celebrations. GalleryPhoto Gallery: Halloween Fun at Tokyo Disney Resort view allAt Tokyo Disneyland, guests can enjoy the Happy Halloween Harvest Parade, which features seven fall-themed floats and Disney characters in costumes. Families can also experience The Haunted Mansion in a whole new way, with Haunted Mansion Holiday Nightmare temporarily enhancing the attraction’s existing storyline. The park has also been festooned with Halloween decor, and guests can end their night with special Halloween fireworks. Over at Tokyo DisneySea, guests are enjoying “New York Halloween Follies,” a Halloween party that’s themed to the roaring 20s, hosted by Mickey Mouse and Minnie Mouse. Guests can also visit Lido Isle to spy a performance by some festive skeletons or head to Lost River Delta to attend Chip and Dale’s Skeleton Fiesta. 9. Halloween Time at Disney California Adventure is much more “quiet” than it is over at Disneyland. There are, however, a handful of special menu items that are available through October 31st. On a recent visit I discovered a fun combo at Schmoozies in Hollywood Land. Schmoozies! The Caramel Apple Smoothie and Pumpkin Muffin are currently being featured as Holiday Specials. Caramel Apple Smoothie & Pumpkin Muffin Signage Of course I had to check both of these items out. The Caramel Apple Smoothie is made from fresh Granny Smith Apples, Caramel & Ice Cream. I think it can be called a smoothie because it has real fruit in it, but don’t get me wrong, it’s NOT a healthy item. It’s really more like a shake. Totally delicious, but not something you’d get from a juice bar! Caramel Apple Smoothie & Pumpkin Muffin Schmoozies makes all “smoothies” fresh to order, so it does take a few minutes to get your drink, especially if the line is backed up. I really enjoyed the Caramel Apple Smoothie and was surprised to be sucking up chunks of crisp apple pieces through my straw. The smoothie is VERY sweet. Almost reminds me of sour apple gummy rings, which I love, but I can only eat a handful. It was the same with this smoothie, I shared it with a friend & we couldn’t finish the whole thing. The Caramel Drizzle on top is Ghirardelli Caramel Sauce. Do you see the hidden Mickey??? Caramel Drizzle Hidden Mickey The Pumpkin Muffin here at Schmoozies was much different than the one served over at Disneyland. The one at Disneyland is much more cupcake-like, with cream cheese frosting and all. I will loosely say that this one is a little bit healther version of a pumpkin muffin. More muffin-like than cupcake-like. Topped with Streusel and Pumpkin Seeds, the muffin is moist and filled with Golden Raisins. Of course I prefer something with cream cheese frosting, but this muffin was also enjoyable! Pumpkin Muffin Close Up Overall, I think this is a great little “Fall” snack combo. The smoothies at Schmoozies are tasty, enormous, and perfect for sharing! Have you ever tried a smoothie from Schmoozies? Do you have a favorite flavor? And one last question that I think I know the majority answer to already… Cream Cheese Frosting Pumpkin Muffin or Streusel & Seed Topped Pumpkin Muffin? Let us know in the comments below. 11. Since the announcement of Disney Infinity 2.0 earlier this year, my son has been asking when he can get the new figures. He currently has every figure from the initial release and loves playing the game. He will be excited to hear about an early purchase opportunity on November 1-2, 2014 at Once Upon a Toy in Downtown Disney Marketplace for Disney Infinity 2.0. We will release the Disney Infinity 2.0 Starter Pack containing Merida from Disney•Pixar’s “Brave” and Stitch (retail $59.99 plus tax). Guests will receive one complimentary Disney figure with the purchase of a Disney Infinity Starter Pack at Once Upon a Toy during the weekend. Additional items being released will include figures of Maleficent, Donald Duck, Aladdin and Tinker Bell. Guests should also look for figures of Hiro and Baymax from Disney’s upcoming animated feature “Big Hero 6” coming to theatres on November 7. Game developers will also be on hand throughout the weekend providing game demonstrations. I’ve played Disney Infinity many times with my son and it’s fun (I especially like the mode where he can create his own worlds). Finally, guests should look for a new series of Power Discs as shown in the image above. These discs are typically presented in a mystery pouch, so you won’t know which ones you get. I can’t believe there will be a Power Disc for Gus from Disney’s 1976 motion picture “Gus.” That’s amazing! The national market release date is November 4, so guests visiting Once Upon a Toy will be some of the first people to get these items. I can’t wait! Gift with purchase offer valid while supplies last. Qualifying purchase based on pre-tax, post discount single transaction amount. Offer not valid on previous purchases. Learn About: MaraAnimal Kingdom Lodge Disney World RestaurantsToday, we’re showing you a fun Fall find from The Mara at Disney’s Animal Kingdom Lodge. I love me some candy corn, but when you combine candy corn and Cupcakes? Even better! Candy Corn CupcakeSo, Disney World has some hidden gems that keep churning out awesome eats that you’d never expect. Places like Sleepy Hollow and Friar’s Nook in the Magic Kingdom, and Landscape of Flavors at Art of Animation Resort tend to be little hot-beds of creativity when it comes to snacks and must-eat treats. The Mara at Disney’s Animal Kingdom Lodge also fits into this category, featuring some seriously great baked goods on a regular basis (like the Chocolate Raspberry Mickey Tart). And so I give you the Candy Corn Cupcake — with Oreo Mickey Ears, even!! Candy Corn Cupcake at The Mara in Disney’s Animal Kingdom Lodge Mounded high with thick Buttercream Frosting in Candy Corn’s traditional tri-color pattern, the cupcake is trimmed out with orange-tinted White Chocolate Curls for even more visual impact. This is all piled on top of dark Chocolate Cake. But when you cut into the cupcake, you’ll find a little surprise hidden inside. Candy Corn Cupcake — Cross Section Now, to be honest, I’m not completely sure what this is. There is definitely chopped up Candy Corn in there, but the consistency is more firm than frosting. Maybe a White Chocolate Ganache? Yeah. We’ll go with that. It was kind of like a candy corn Halloween Truffle tucked inside. The flavors here are sweet, sweet, and more sweet. So if you’re looking for a Sugar Big Bang, you’ve found the cupcake of your dreams. Candy Corn Cupcake — Up Close So, while the flavor is pretty much…sugar…let’s be honest: isn’t the flavor of candy corn, too? Pretty authentic, I’d say. ;-D And don’t forget to check out even more awesome Disney cupcakes in our Disney Cupcake Gallery! 13. The Rocky Road Gourmet Apple is a long-time favorite of mine, and I’m happy to announce that this fan favorite is returning for a limited time in November. This month’s apple has been dipped in creamy caramel, enrobed in sweet milk chocolate and covered in marshmallows and diced almonds. Add a drizzle or two (maybe more) on top, and I guarantee your taste buds will be begging for more. Look for this sweet and classic treat beginning November 1 at Candy Palace on Main Street, U.S.A., in Disneyland park; Trolley Treats on Buena Vista Street in Disney California Adventure park; and Marceline’s Confectionery in the Downtown Disney District. 16. There are still a couple of days before Halloween is officially here, but the celebration is well under way at Disney Parks. Whether you’re enjoying Halloween Time at Disneyland Resort or Mickey’s Not So Scary Halloween Party at Magic Kingdom Park at Walt Disney World Resort, this fashion forward look is perfect for a day or night of fright-less fun. Jack Skellington takes center stage on this comfy, purple hued sweatshirt, a nod to his royal pedigree as the Pumpkin King of Halloween Town. Pair it with black denim or leggings and black flats. We chose the patent Mickey ballet flats from our merchandise collection. The Skellington print is subtly repeated in the purple and black cotton scarf, the perfect layering piece for cool fall evenings. Accessorize with an arm party featuring one of the newest Alex + Ani for Disney designs. The Jack Skellington charm bracelet is a nice touch for the season or fun any time of year when stacked with the Disneyland or Walt Disney World bracelets you may already have in your collection. 18. We are so excited to finally shed some light on what’s happening behind those construction walls over at Walt Disney World’s Downtown Disney! Disney Springs Construction It seems that after stops, starts, delays, and renamings, Disney Springs is finally taking shape. And today, we’re sharing with you not one, but TWO new confirmed restaurants that will join the Disney Springs lineup sooner rather than later. And BOTH restaurants were featured on early posts here on DFB highlighting future Disney Springs dining. The BoathouseThe Boathouse will offer waterfront dining with a nautical theme. Located at The Landing within Disney Springs, the restaurant is the brainchild of Schussler Creative, the same company that brought you other super-themed restaurants around Disney like T-Rex, Rainforest Cafe, and Yak & Yeti. Gibsons Restaurant Group will operate the spot. The Boathouse — Inside Guests can expect a mulitfaceted menu featuring American fare, including seafood, steaks, and chops. In addition, the restaurant will feature three different themed bars, including The Captain’s Raw Bar, The Admiral’s Club Bar, and The Dock Bar. Rooms within the restaurant will also carry a nautical theme and decor. The Boathouse will offer guest more than just food, however. The restaurant will also serve as the launching spot for a number of boat-themed attractions. Guests can ride on a 40-foot Italian Water Taxi while they enjoy champagne and chocolate-covered strawberries. There will also be guided “Amphicar” Tours that highlight sites around Disney Springs. The Boathouse — Outside View Live music and private dining space round out the offerings at The Boathouse. The new restaurant is scheduled to serve Disney Springs guests until 2:00 AM. The Boathouse is slated to open in the Spring of 2015. Morimoto AsiaYou may know him best as an Iron Chef, but soon, Chef Masaharu Morimoto will become the latest celebrity to have a dining outpost at Disney. Chef Morimoto is set to be the face of Morimoto Asia, his first Pan-Asian restaurant. Located in the spot that was once Mannequins Dance Palace, Morimoto Asia will be a waterfront restaurant showcasing selections from across the entire Asian continent. Morimoto Asia — Outside View The two-story venue will feature show kitchens where chefs will exhibit traditions like Peking Duck Carving. Dim Sum will also factor into the menu. Guests can enjoy waterside seating or grab a drink in the cocktail lounge as well. “It’s a wonderful chance to share some of my favorite foods from across the Asian continent,” Morimoto said in an interview. Morimoto Asia — Inside To bring the concept to life, Chef Morimoto is teaming with Patina Restaurant Group, the company behind established Disney restaurants like Via Napoli and Tutto Italia in Epcot’s Italy Pavilion. The group also runs the table-service Naples Restaurant and the counter-service Napolini in Disneyland’s Downtown Disney. We first told you that the company had filed permits for a new restaurant in this spot last Spring. We thought it would be another Italian offering, so this is a fun twist! Look for Morimoto Asia to open its doors in Summer 2015. With the news that we’re seeing early predictions come to pass (including Food Truck Row, and Splitsville — Trader Sam’s will open at the Polynesian), it makes us wonder…what else is on that poster that might pop up at Disney Springs? Hmmmm… What Else Might Show Up at Disney Springs? And now we want to hear from you! Are you looking forward to experiencing The Boathouse, Morimoto Asia, or both? 19. The spiffing-up began earlier this year at Steakhouse 55, one of the finest restaurants at the Disneyland Resort: new carpet, new chairs, new dishes, new silverware – “It’s almost like opening a new restaurant,” says Chef Marcel St. Pierre. Chef Marcel took the helm in early 2014 and has been working on the new menu for nearly four months, side-by-side with manager and sommelier Brian Van Amber. And now, with extensive training for the staff complete in everything from guest service to wine pairings, Chef Marcel says they’re ready to launch tomorrow. While a handful of dishes may sound familiar (Baltimore crab cake, filet mignon, slow-roasted prime rib), every single dish on the menu has been refined, says Chef Marcel. You’ll still find Tiger Prawns, but they’re served with a new Bloody Mary cocktail sauce, shallot mignonette and lemon gelée. The new pan-roasted pork belly appetizer comes with truffle mascarpone, green apple and pickled black kale. Chef Marcel is especially proud of the new smoked filet mignon tartare, the meat arriving tableside under a crystal dome. When the dome is lifted, there’s the aroma of smoke as the dish is gently tossed tableside with mustard aioli and cage-free egg yolk, then served with shaved rye croutons. A clever new appetizer is ratatouille “meatballs,” made with finely chopped mushrooms, lentils, carrots, celery, onions and a little bread crumbs. The meatballs are served with zucchini spaghetti, vegan Bolognese and a shave of Parmesan (request no Parmesan for the perfect vegan starter). Hearts of romaine is the Steakhouse 55 version of the classic Caesar, with Castelvetrano olives from Italy, crispy bacon lardons and Caesar dressing. The new French onion soup gets a hearty seasonal vibe with cream and chicken stock, served with grilled onions and California Muenster cheese focaccia. You’ll still see the classic cuts of meat: filet mignon, bone-in ribeye, New York strip, prime rib, Porterhouse. But the classic cuts receive a special twist, like a hickory-molasses rub on the New York strip. King salmon is crusted with fava bean and rye. Lamb chops are roasted with garlic “dust” and peppercorn. Each cut of beef is beautifully garnished with roasted bone marrow (with a tiny fork for scooping out the rich center) topped with lemon gremolata. Some of the new sides to share the spotlight are a truffled mac ‘n cheese, flash-fried spinach, and the Delmonico Gruyère Casserole — a decadent, cheesy side made with fingerling potatoes, Applewood smoked bacon and fresh thyme. Duck-fat fries come with blood orange sabayon for dipping; the mashed potatoes have a new mushroom-infused gravy. Dessert isn’t an afterthought, and while the legendary 24-Layer Cake stays on the menu, it’s now served with spiced pumpkin gelato and roca (almond butter-crunch toffee). Chef Marcel thinks the new warm apple butter cake will be another home run, served right out of the oven with a scoop of Bourbon ice cream and a side of crème Anglaise. Or try the banana mascarpone cheesecake with caramel glaze, honey-dipped pecans and butterscotch sauce. The new, three-course Steakhouse 55 Chef’s Tasting for $55 ($85 with wine pairings) makes it easy to choose: start with the Fifty-Five Salad (ruby beets and feta cheese with apricot granola and citrus vinaigrette); next, the braised short rib Bourguignon with roasted root vegetables, and finish with crème brûlèe served with pear marmalade, candied bacon madeleine and cranberry compote. The new Steakhouse 55 has been a real team effort,” says Chef Marcel. “We hope we’ve created a fantastic new dining experience for our guests.” For reservations, call 714-781-DINE or visit disneyland.com. 20. Anyone who has attempted to build anything knows how challenging and time-consuming the task can be. But with a can-do attitude and a giving spirit, it was an easy venture for a group of Walt Disney World Resort cast members who built larger-than-life sculptures using nothing but cans of food! During the recent CANstruction Orlando food drive and design competition, it was impressive to see two teams of Disney VoluntEARS in action as they stacked more than 11,000 canned and packaged food items to create an iconic pair of mouse ears and a tribute to Disney’s beloved attraction “it’s a small world.” Their desire to give back to the community was in full display as they carefully and strategically stacked one can at a time. Following the annual CANstruction event, everything used in the sculptures was donated to Second Harvest Food Bank of Central Florida, a nonprofit that Disney has supported for more than 20 years donating several million pounds of food through its “Disney Harvest Program.” Take a minute and see for yourself how these Disney VoluntEARS got everything to stack up!
