  2. National Women’s History Month has flown by and this is the final post in the series highlighting our fabulous Disney Women of Food & Beverage. Although each of the women profiled are confident and self-assured, it only took two words to jar them out of their comfort zone – photo shoot! But as they gathered together for their photo sessions armed with “fun props,” their apprehension slipped away and conversations were punctuated with laughter. We had the privilege to work with two wonderful photographers, Matt Stroshane and David Nguyen, who made it a fun experience for everyone. As both Matt and David have daughters, I thought it would be interesting to hear what they have to say about these 22 women we have profiled and what advice they have for their own daughters. I have included “mini” profiles on them also – so you can see the talent behind the photos. In one of the first posts, I wrote that narrowing down to only 22 cast members to highlight in this series was extremely difficult as the depth of talent at every level is truly impressive … and I meant every word. So, congratulations to the featured Disney Women of Food & Beverage and to the over 22,000 Cast Members in Food & Beverage at Walt Disney World Resort and Disneyland Resort that create the magic each and every day. If you are not waking up each day looking forward to the day and what it will bring and how you can make a difference you may want to reconsider how you are spending the precious time that you have. —– Hey there! This is Alex Dunlap, Food & Beverage Communications Coordinator for Walt Disney Parks and Resorts Public Relations, and I just had to add one more amazing woman to our Disney Women of Food & Beverage List – Karen McClintock. She’s known as the “Mom” to many of our Food & Beverage Cast Members, and has represented Disney dining with pride, humility, and magic for 26 years. She started her Disney Career with Disney’s Food & Wine Society, the foundation for the current annual Epcot International Food & Wine Festival. She collaborates on all the popular Disney Cookbooks, orchestrates Disney dining content for print, radio, television and social media, and plays an integral role in the next generation of Disney restaurants.   6. It is true that good things come in small packages—especially when you are talking about a delicious medium-rare beef tenderloin slider. What could be better? How about topping it with garlic chimichurri and pickled onions? COUNT ME IN! Our chefs at the Disney California Adventure Food & Wine Festival at the Disneyland Resort show us how easy it is to make their popular Beef Tenderloin Sliders with Garlic Chimichurri and Pickled Onions, served at the Cluck-a-Doodle-Moo Marketplace, at home. These little bundles of joy strike the perfect balance of the buttery tenderness of beef tenderloin, acidity from pickled onions and the garlicky goodness from chimichurri. Be sure to check out all the great eats and special events at the Disney California Food & Wine Festival through April 12. Enjoy the video and recipe below! Beef Tenderloin Sliders with Garlic Chimichurri and Pickled Onions Makes 10 sliders PICKLED ONIONS 1/4 cup red wine vinegar 1 1/2 teaspoons sugar 1 teaspoon coarse salt Pinch dried oregano 1/2 medium red onion, julienned CHIMICHURRI SAUCE 1 whole bulb garlic, broken into cloves 1/4 cup, plus 1 teaspoon canola oil, divided Coarse salt and black pepper, to taste 1/2 cup orange juice 3 ounces fresh lime juice 1/2 cup finely chopped flat leaf parsley 1/2 cup diced red onion 1/4 teaspoon cayenne pepper BEEF TENDERLOIN SLIDERS 18-20 ounces beef tenderloin Coarse salt, freshly ground pepper, to taste 10 slider rolls FOR PICKLED ONION: Mix together all ingredients except onion until sugar dissolves. Place onion in a jar; pour mixture over and refrigerate 24 hours. FOR CHIMICHURRI SAUCE: Preheat oven to 350°F. Drizzle cloves with 1 teaspoon oil, season with salt and pepper and wrap in aluminum foil. Roast 30 minutes, or until golden brown and soft. Cool 10 minutes, then peel each clove. Heat orange juice in small saucepan over medium heat until reduced by 1/2. Cool 10 minutes. Place peeled, roasted garlic cloves in small bowl and press with back of spoon until smooth. Discard any hard pieces. Stir together roasted garlic, orange juice, remaining 1/4 cup of canola oil, parsley, red onions and cayenne pepper in a medium-sized bowl. Season with salt and pepper. Refrigerate until ready to use. FOR BEEF TENDERLOIN SLIDERS: Season beef tenderloin with salt and pepper. Grill or pan-sear until center reaches medium-rare. Rest 5 minutes before slicing. Cut slider rolls in half and toast. Set aside. TO SERVE: Slice tenderloin into 10 equal pieces, about 1-inch thick. Place one slice of tenderloin on bottom of each slider roll. Top beef with chimichurri and pickled red onion. What to drink? Try a Napa Valley Cabernet Sauvignon.   7. This April, guests can step into spring with stylish new accessories and apparel from Disney Parks containing a perfect color for the season – millennial pink! A millennial pink headband will first debut exclusively at World of Disney in Downtown Disney District at the Disneyland Resort this Sunday. Additional locations at Disneyland and Walt Disney World Resorts will carry the sequined headband starting in mid-April. “We experiment with popular color trends when designing merchandise for Disney Parks,” explained Jeanne Lewis from the headwear development team. “With its soft, blush hue, millennial pink is one of the hottest colors in the market, making the new headband an on-trend, must-have item for springtime visits.” Jeanne was the driving force behind the wildly popular rose gold headband introduced last fall, which inspired apparel, jewelry and even tasty treats created especially for Disney Parks. The new sequin-filled headband gives a nod to the rose gold-dusted original, while setting the stage for additional color-trend headbands arriving later this year. In mid-April, the headband will be joined by another beloved apparel item at Disney Parks, a new millennial pink Spirit Jersey. “We know Guests enjoy creating fashionable looks using products designed to complement each other. We closely aligned the launch of [Spirit Jerseys] with the headband so Guests could make fun outfits for spring,” said women’s apparel merchandiser Angelique Vu. These 100% cotton, pullover tops have theme park logos printed on the front. Pink glitter puff ink lettering of the respective Disney Resort destination is emblazoned across the back of these long sleeve shirts. Guests visiting Walt Disney World Resort have one additional millennial pink accessory to complete any outfit—a retail MagicBand 2 currently available in select merchandise locations. With the innovation of MagicBand 2, guests can use this MagicBand and others to unlock the magic of a Disney vacation—from skipping the front desk and going directly to your resort room, effortless theme-park entry, to FastPass+ redemption and Disney PhotoPass association. Now, you may know Jungle Juice — served around Animal Kingdom and also Animal Kingdom Lodge in spots like Boma — by one or more of its other names. Olivia Farnsworth, legendary founder of Olivia’s Café at Disney’s Old Key West Resort, is among the inspirations behind a weekly wine-tasting experience that’ll begin serving Disney Vacation Club Members at the restaurant on April 15 as part of Membership Magic. According to our friends at Walt Disney Imagineering, “Olivia Farnsworth is 60 going on 20. She arrived in Conch Flats [the setting of Disney’s Old Key West Resort] longer ago than you’ll get her to talk about … moved into a small cottage along Turtle Krawl, turned on her stove and changed everything around here for the ‘batter.’ Upwind from downtown, Olivia’s cooking was a hard secret to keep. Dinner traffic boomed. Soon, she began doubling recipes, then double-doubling, then triple-doubling until the math got ugly.   11. In 2021, a new Four Diamond hotel will open to guests visiting Disneyland Resort. New Disneyland Resort Hotel Concept Art ©Disney This new hotel will connect all of what will be four Disneyland hotels with walkways lined by lush gardens, completely transforming the west end of the Downtown Disney District. And that space will come with the closure of several restaurants and businesses in Downtown Disney. According to the ocregister.com, the following spots will close by June 30th (with some spots possibly closing earlier) to make way for construction: AMC 12 Theatres Rainforest Cafe ESPN Zone Earl of Sandwich Alamo Rent-a-Car Starbucks (on the west side only) Two Disney-operated businesses — Disney Vacation Club and Walt Disney Travel — will continue to run in other locations. Also according to ocregister.com: “Essentially, everything on the Downtown Disney property west of the Lego store and Disneyland Drive will be demolished, until the boundary of the Disneyland Hotel is reached.” It’s anticipated that the much-loved Earl of Sandwich will stay open through June 30th, and it’s also being reported that the sandwich shop’s employees will have the opportunity to be considered for positions at Buca di Beppo.   14. Returning this year to the Epcot International Flower & Garden Festival is the Florida Fresh Outdoor Kitchen, inspired by the fresh and amazing food that we have here in the Sunshine State! Located between the Morocco and France pavilions, Florida Fresh features a delicious carne guisada with a black bean cake and cilantro-lime sour cream; a spicy blackened shrimp and cheddar cheese grits with brown gravy and local sweet corn relish as well as a key lime tart with toasted meringue to satisfy all of those sweet and savory cravings. If you’re looking for something refreshing on a sunny day, you can enjoy fantastic beverages like a key lime sparkling wine from Florida Orange Groves Winery (St. Petersburg, FL); a quat seasonal fruit ale from Tampa Bay Brewing Company (Tampa, FL); a monarch milk stout from First Magnitude Brewing Co. (Gainesville, FL) and a watermelon cucumber slushy with Tamiami Florida Gin, among other options. Just talking about this makes me hungry! If you can’t get to Epcot fast enough, here’s the deliciosa recipe for the carne guisada that you can make right at home: Serves 4 BLACK BEAN CAKES 2 tablespoons olive oil, divided 1/2 small white onion, diced 1/2 medium red bell pepper, diced 1/2 medium green pepper, diced 1 garlic cloves, minced 1/2 tablespoon ground cumin 1 (14.5 ounce) cans black beans, rinsed and drained 1 chipotle peppers, chopped Salt, to taste Pepper, to taste 1/2 cup cooked quinoa 3/4 cups corn flour FOR CARNE ASADA 1 teaspoon olive oil 1 small white onion, diced 1 medium red bell pepper, diced 1 clove garlic, minced 2 tablespoons tomato paste 1 (14.5 ounce) can diced tomatoes 1 pound cooked beef brisket, shredded 1 bay leaf 1/2 cup green olives, sliced 2 tablespoons chopped cilantro TOMATO RELISH 2 medium red tomatoes, diced 1/4 small red onion, diced 1 tablespoon chopped parsley 1 tablespoon olive oil 2 tablespoons white balsamic vinegar Salt, to taste Black pepper, to taste CILANTRO SOUR CREAM 1/2 cup sour cream 2 teaspoons lime juice 2 tablespoons chopped cilantro GARNISH 1/4 cup chopped cilantro FOR BLACK BEAN CAKE: Heat 1 tablespoon of olive oil in a small sauté pan over medium heat until hot. Add onion, red bell pepper, and green bell pepper and sauté for 5 minutes, until tender. Stir in garlic and cumin, cook for 1 minute. Remove from heat and place in a large mixing bowl. Stir in black beans and chipotle peppers, mashing with a fork. Season with salt and pepper, to taste. Mix in quinoa and corn flour. Divide into 4 balls and flatten to make patties. Heat remaining 1 tablespoon of olive oil in a large sauté pan until hot. Cook black bean patties for 3 minutes on each side, until crispy. Keep warm until ready to serve. FOR CARNE ASADA: Heat oil in a large pot over medium heat, until hot. Add the onion, red bell pepper, and green bell pepper, and sauté until tender. Stir in garlic, tomato paste, and diced tomatoes. Add the cooked brisket, bay leaf, green onions, and chopped cilantro. Keep warm until ready to serve. FOR TOMATO RELISH: Combine tomato, red onion, parsley, olive oil, and white balsamic vinegar in a small bowl. Season with salt and pepper to taste. Refrigerate until ready to serve. FOR CILANTRO SOUR CREAM: Mix sour cream, lime juice, cilantro, and salt in a small mixing bowl. Refrigerate until ready to serve. TO SERVE: Place 1 seared black bean cake on each plate. This time you’ll need to head on over to the Grand Floridian Resort & Spa to try the Rose Gold Unicorn Cupcake at Gasparilla Island Grill! You can see how the cake is full of air from whipped eggs in the batter. And grab a couple of extra napkins. But we aren’t hating on the sponge, because when eaten with the filling — a super rich hazelnut-flavored cream cheese! — the sponge was necessarily simple. A dense cake with this dense filling would be too much, even for us lovers of cream cheese everything! Welcome to the Grand Floridian! This year’s Easter egg displays are dispersed throughout the lobby and cover a wide range of Disney films and artistic styles. And these eggs are designed to impress!   18. With so much spring fun already in store at Disney Springs, consider this the cherry (festival) on top! Taking place at Morimoto Asia through April 15, 2018, the Sakura Festival celebrates the arrival of spring with a special focus on cherry blossoms. Featuring ticketed events, menu specials and Instagram-worthy décor, the venue will showcase the pink blooms of the famed Japanese Sakura. Though the festival kicked-off on March 15, there are still four more opportunities to take part in an over-the-top Morimoto experience. While they all sound incredible, the Ramen Tasting is calling my name. (Seriously. Have you ever tried their Tonkotsu Ramen? If just might change your life!) Here’s a look at what’s still to come: Seas of Japan 101 (March 30, 2018; 4-6 p.m.; $45): Learn more about the seas of Japan and the delicacies that come from their waters. During this two-hour educational seminar, you’ll learn while tasting select menu items paired with sake. Morimoto Asia’s Guest Chef Series (April 3, 2018; 7-9 p.m.; $120): Take part in the inaugural event for this new series as the culinary talent from Morimoto Asia welcomes Chef Hitoshi Sugiura from Tokyo, Japan. The chefs will collaborate on a six-course Pan-Asian dinner, paired with wines from across the globe, for guests to enjoy. Ramen Seminar and Tasting (April 7, 2018; 12-3 p.m.; $36): Spend an afternoon learning about the many types of Asian noodles, then stick around to taste several varieties of ramen dishes. Matsuri Festival (April 15, 2018; 12-4 p.m.; $45 for guests ages 10 and up; children under 9 are free): Perfect for family fun, guests will have the chance to indulge in multiple street food stations, four beer and cocktail stations, and Japanese carnival games and activities suitable for guests of all ages. If you’re not able to get tickets to any of the above offerings, you can certainly enjoy special drinks, appetizers and desserts, all available for a limited-time. On the menu: locally-brewed Crooked Can Sakura Kolsh, Cherry Blossom Martini, Blue Cherry Cocktail, Chilled Panacea Oysters, and a Sakura and Peach Bavarian Dessert.   19. News came out last month about big changes coming to Dinner at Magic Kingdom’s Be Our Guest Restaurant, beginning July 27, 2018. We learned about dinner becoming a new prix fixe meal, and that the experience will require 2 Table Service credits on the Disney Dining Plan. We also received all sorts of menu details, which you can read about in full and see pictures of by clicking here. Be Our Guest Restaurant One thing we didn’t learn, however, is what the Beast will be serving for dessert after dinner in his Castle. While guests will order their choice from the appetizer and entree selections, the final course remained a mystery… until now!! Introducing the Dessert Trio, which will be exclusive to the Dinner menu at Be Our Guest Restaurant. ©Disney A raspberry macaron with lemon filling and fresh raspberries and a whole maraschino cherry dipped in dark chocolate with hazelnut topping are plated on the outer edges of the stained glass-inspired plate, featuring the Enchanted Rose from Beauty and the Beast. And in the center? Why, that’s a white chocolate cup — Chip, of course! — filled with… The Grey Stuff!! Très adorable! And with that, the dinner menu is complete! Pricing for the new experience will be $55 for adults, and $35 for children (ages 3-9), or two credits on the Disney Dining Plan, as noted above. Tax and gratuity are not included. With the 35th Anniversary “Happiest Celebration!” just around the corner, Tokyo Disney Resort guests can now enjoy the first springtime offerings during Disney’s Easter at Tokyo DisneySea, including a sneak peek of the theme song for the celebration. Colorful decorations, entertainment, special menus and exclusive merchandise bring this season to life at the resort. Tokyo DisneySea will host an egg hunt for the very first time this year, and guests who find the whimsical eggs themed to Disney characters will receive with an exclusive Bunny Ears hair clip. At the Mediterranean Harbor, Mickey and Minnie are joined by Disney characters to perform in the renewed Fashionable Easter show celebrating the arrival of spring. Exciting pyrotechnics and the premiere of the theme song for the “Happiest Celebration!” make this show a can’t-miss. Over at Waterfront Park, members of the Tokyo DisneySea Maritime Band are also be dressed in new costumes in honor of the season. The first Tokyo Disney Resort 35th Anniversary merchandise is now on sale alongside dozens of new Easter designs, including the fan-favorite Bunny Ears Headbands and Easter “Bunny” Bonnets.   22. As we shared in last week’s first look, Disneyland park will light up when “Together Forever – A Pixar Nighttime Spectacular” celebrates the heart of Pixar! Debuting at the start of Pixar Fest on April 13, this all-new nighttime spectacular will take guests on an emotional journey of friendship with their favorite Pixar Pals—when unlikely characters first meet one another, set out on adventures and overcome adversities that forge everlasting bonds.   24. One of the hallmarks of the Epcot World Showcase pavilions is their ongoing mission to bring authentic cultural experiences to our guests. From live entertainment, to our cultural representative Cast Members, to film experiences showcasing majestic vistas of the countries, we strive to give guests a glimpse of the people, culture and history of the country through art, dining and architecture. For some countries, that includes an exhibition of authentic cultural art. Recently, we told you about updates to the art gallery in Mexico, and more exciting work is underway to refresh the gallery in Norway. Also coming this summer to the American Heritage Gallery at The American Adventure is a brand new exhibition called “Creating Tradition: Innovation and Change in American Indian Art”. “Creating Tradition: Innovation and Change in American Indian Art” is made possible through the collaboration of the Museum of Indian Arts and Culture (MIAC) in Santa Fe, New Mexico, and the Smithsonian’s National Museum of the American Indian (NMAI) in Washington, D.C. Among the featured artists with works on display are fashion designer Loren Aragon (Acoma Pueblo), noted doll maker Glenda McKay (Ingalik-Athabascan), and Juanita Growing Thunder (Assiniboine Sioux) from the Growing Thunder family of Montana. As with other exhibitions that have graced the American Heritage Gallery, this new exhibition will feature interactive elements, where some of the artists will share the creative process and inspirations behind their works in their own words.   25. Spring has sprung at Walt Disney World Resort, and if you stop to smell the flowers, you might just smell some new snacks being cooked up at Magic Kingdom Park! There’s an enchanting array of new offerings now available, and even more coming soon. Perfect for the season, we’ve got a brand-new Flower Crown Cupcake available at Main Street Bakery. This beautiful vanilla cupcake is filled with raspberry buttercream and topped with a buttercream flower crown and hard candy Minnie Ears. This yummy treat is the perfect Spring snack, and even makes for a good photo opportunity. Just grab some Crochet Floral Minnie Ears from your favorite Disney shop and pose for the camera with your flowery cupcake in hand! Just across the street at Casey’s Corner, you’ll find a brand-new refreshing beverage – a Mint Julip Lemonade Slushy! This non-alcoholic lemonade slushy comes with mojito-flavored syrup, and a cherry, mint and lemon garnish. And we can’t forget about the popular Hot Dog of the Month. While there’s only a few days left in March, don’t miss your chance to try the Greek Hot Diggity Dog! And for April’s Hot Dog of the Month, you’ll find the Cuban Hot Diggity Dog, topped with Mojo pork, relish, swiss, and mustard. These special “of the month” toppings can even be added to an order of fries! At Plaza Ice Cream Parlor, March’s Ice Cream of the Month was Dulce De Leche, and April’s flavor will be Cookie Dough – yummy! But the ice cream doesn’t stop there – a Brownie Sundae and an Apple Blossom Sundae have also been added to the menu! Right next door at The Plaza Restaurant, you’ll find March’s Milkshake of the Month: Coffee Mint, with mint chocolate ice cream, coffee, chocolate sauce, whipped cream and a cherry. And for April, the Milkshake of the Month will be a Caramel Turtle Milkshake with vanilla ice cream, hot fudge, caramel sauce and walnuts. In Fantasyland, Pinocchio Village Haus has added an Italian Cream Cake to the dessert menu. This lemon cakes comes topped with cream cheese icing, toasted coconut and a white chocolate piece featuring everyone’s favorite Conscious – Jiminy Cricket! As for the Flatbread of the Month – March’s flatbread is Buffalo Chicken. And since April is National Grilled Cheese Month, the April Flatbread of the Month will be a Grilled Cheese Flatbread with ricotta, mozzarella, parmesan, swiss and cheddar and served with a side of tomato-basil soup for dipping! At Be Our Guest Restaurant, I recently posted about an exciting new dinner menu coming this summer, and I now have the scoop on the fabulous dessert trio. This trio will have a raspberry macaron with lemon filling and fresh raspberries, a whole maraschino cherry dipped in dark chocolate with hazelnut topping, and a white chocolate Chip cup with our signature Grey Stuff! It will also be exclusive to the dinner menu. At Gaston’s Tavern, you’ll find a new Ham, Brie and Grain Mustard Sandwich as well as a Smoked Turkey, Swiss and Cranberry Aïoli Sandwich. In Tomorrowland, Sonny Eclipse has a new dessert at Cosmic Ray’s Starlight Café – a cookies & cream cheese cake topped with chocolate, galaxy sprinkles and a white-chocolate piece featuring the amazingly-talented Sonny Eclipse himself. And over at Liberty Square, you’ll find a crisp new Shrimp Wedge Salad at Columbia Harbour House. And finally, in Adventureland, I’ve got a fruit-tastic update to the menu at Sunshine Tree Terrace. Our famous Citrus Swirl, the classic frozen orange juice slushy twisted with vanilla soft-serve ice cream, has been joined by the new Orange Cream swirl! This new swirl twists together vanilla soft-serve ice cream with Orange Dole® Soft-Serve to create a tasty new citrus-flavored treat. Both of these swirls are now available in a cup, or as a float with refreshing orange soda. So there you have it.
