We recently started the new “Tastes of Aulani†series on the Disney Parks Blog so you can take home some of the delicious Hawaiian flavors of Aulani, a Disney Resort & Spa. Today, our series continues with Chef Kevin from ‘AMA‘AMA – Contemporary Island Cooking, preparing the delicious Grilled Mahi Mahi Tacos available during lunch. Enjoy the video and recipe below and then give these tasty tacos a try in your kitchen! Grilled Mahi Mahi Tacos Makes 8 (6-inch) tacos Island Slaw 1 1/2 cups shredded green cabbage1/4 cup diced pineapple1/4 tablespoons finely sliced red onions1/4 tablespoons shredded carrots3 tablespoons rice vinegar3 tablespoons salad oilSea salt, freshly ground white pepper, to tasteSalsa 1 cup diced tomatoes3 tablespoons diced white onion1/4 teaspoon fresh minced garlic1/2 jalapeño pepper, seeds and white membrane removed, mincedSea salt, freshly ground white pepper, to tasteChipotle Sauce 1/2 cup light sour cream1 tablespoon minced chipotle in adobo sauce, or to taste1/4 teaspoon fresh minced garlicSea salt, freshly ground white pepper, to tasteGrilled Mahi Mahi 1 tablespoon olive oil1 pound mahi mahiSea salt, freshly ground white pepper, to tasteFor Serving 8 (6-inch) whole-wheat tortillasIsland SlawSalsaChipotle sauceFresh chopped cilantro, for garnishFor island slaw: Toss together cabbage, pineapple, onions, and carrots in a mixing bowl.TStir in rice vinegar and oil; season with salt and pepper. Refrigerate until ready to serve.For salsa: Combine tomatoes, onion, garlic, and jalapeños in a mixing bowl. Season with salt and pepper. Refrigerate until ready to serve.For chipotle sauce: Mix sour cream, chipotle, and garlic together in a small bowl. Season with salt and pepper. Refrigerate until ready to serve.For grilled mahi mahi: Season grill pan with oil and heat over medium heat.Season the fish with salt and pepper. Cook for 3 minutes, then turn and cook until just opaque, about 3 to 4 minutes more. Keep warm until ready to serve.To serve: Grill tortillas until warm on non-stick pan over medium heat.Evenly divide island slaw on each tortilla, then top with mahi mahi, salsa, and chipotle sauce. I’m delighted to share that several unique Disney Parks-inspired shirts will be coming to the Disney Parks online store in March 2015. Disney Design Group artist Richard Terpstra designed the two shirts that will be released from March 9-15, 2015. For the “Date Night at Disneyland Resort†shirt, Richard was inspired by vintage advertising from Disneyland park. This design will be offered for both women and men. I’m thinking this would be a perfect T-shirt for my fiancée and me to wear during one of our many dates to Trader Sam’s Enchanted Tiki Bar at the Disneyland Hotel. Richard’s other vintage shirt design, The Dapper Dans at Main Street, U.S.A., will be offered for men, women and youth. From March 30 to April 5, we will release two shirts that were inspired by classic Disney attractions from Disneyland and Walt Disney World Resorts. The Adventure Thru Inner Space was designed by artist Ian Giles. This Tomorrowland attraction was found at Disneyland park from August 5, 1967 to September 2, 1985. It’s the one Disney attraction I wish I could have experienced as it looked amazing (as seen in this article). Richard designed the If You Had Wings shirt that combines visual elements from the attraction that operated in Tomorrowland at Magic Kingdom Park in Florida from June 5, 1972 until June 1, 1987. When attraction sponsors changed, it was replaced by If You Could Fly, which was open from June 6, 1987 to January 3, 1989. It’s the one attraction I vividly remember from my first visit to Walt Disney World in 1983. I still can’t believe I will soon own this shirt! Fun news for those of you visiting Disney World this week! Slow Food Orlando is sponsoring Eat Local Week in The City Beautiful — and it’s happening right now! While the event showcases eating, drinking, and shopping local throughout the Central Florida Region, there are opportunities to celebrate local growers and producers by dining in some of our favorite Disney Restaurants. Enjoy menus featuring locally-sourced ingredients all this week, showcasing ingredients from Florida farms, ranches, and fisheries. And the list of participating Disney restaurants includes some of our tried and true favorites. Choose from The Wave…of American Flavors or California Grill in Disney’s Contemporary Resort. We’ve enjoyed delicious seasonal dishes in both. A Beautiful View and the Season’s Best Flavors at California Grill At Disney’s Grand Floridian, dine slow-food style at the beautiful Citricos. Or hop over to Disney’s BoardWalk for dinner at Flying Fish Cafe — hands down, one of my absolute favorite spots! (Read our latest review of Flying Fish here.) The Flying Fish Cafe is Always an Excellent Choice, Especially for Seafood, Like Their Killer Crabcakes But we aren’t finished! Yachtsman Steakhouse, known for perfectly prepared steaks and seasonally-inspired sides, will also be participating. Finally, end your Eat Local tour at Jiko in Disney’s Animal Kingdom Lodge. It’s a beautiful restaurant that always offers a nice respite, and the kitchen never ceases to surprise us with the best of seasonal offerings. Beautiful Surroundings at Jiko If you choose to venture off of Disney Property, you’ll find that even more fun and tasty adventures await you. While some of the events took place this past weekend, there’s still plenty more to enjoy between now and Saturday, March 14! Eat LocalIn addition to the myriad of participating Disney Restaurants, other area locales are also offering menus featuring locally-sourced ingredients all week. These include Citrus, Crimson Tavern, The Rusty Spoon, Swine & Sons, and Wild Ocean Seafood Market. Learn LocalHop on I-4 and travel up to Sanford to attend the Lexicon of Sustainability Pop-Up on March 13 from 6-8PM. You’ll engage in a learning experience about the local food movement, as told by a collection of photo collages that highlight the movement’s leaders nationwide. This is event is free, and will feature Florida made/grown refreshments. Voluntary donations to support Celery Soup, Florida’s Folk Life Play, will be accepted. The Sunshine State is also home to a number of wineries as well. The recent expansion of Disney California Adventure park gave us even more ways to immerse our guests in new stories, and we’re excited to continue this expanded storytelling this year with the addition of the Grizzly Peak Airfield. The first phase of this expansion, the all-new Smokejumpers Grill, opens March 20. This new quick-service location takes inspiration from the brave men and women who fight wildfires in our California forests. In addition to a whole new look, the location will feature an updated menu with tasty items like a Bacon Cheddar Burger, Grilled Chicken & Jack Sandwich and Chili Cheeseburger! This is just the beginning of the Grizzly Peak expansion, which will bring new building exteriors, landscape features and more to the former Condor Flats area. Lush pine trees will bring cool areas of shade, making our guests feel they have been transported to California’s High Sierras. When the rest of the area opens later this spring, Soarin’ Over California will also reopen with updates to its screen and projection system, bringing a visually enhanced experience. The Haunted Mansion, and the different versions of it at Disney Parks around the globe, are among my favorite to write about because they have such great storylines – and stories – to tell. In today’s sunrise shot, which was snapped by photographer Tom Bricker, you can see the sun rising over Phantom Manor at Disneyland Park (in Paris). Not only is it a lovely shot, but this photo actually illustrates a cool fun fact about the attraction: Unlike other Disney Parks around the world, this Haunted Mansion-type of attraction actually appears in Frontierland. (At Walt Disney World Resort, you can find it in Liberty Square, at the Disneyland Resort in California it’s located in New Orleans Square and at Tokyo Disneyland, it’s in Fantasyland).
