Greetings from the Disney Fantasy! Today we are bringing you a review exclusive to this beautiful ship — the Palo “Be Our Chef” Cooking Class! Disney Fantasy While Palo, the adults-only, signature Italian restaurant, is located on all four of the Disney Cruise Line ships, the “Be Our Chef Experience” is only available aboard the Disney Fantasy. This portside offering teaches guests the art of Northern Italian cooking from some of the ship’s chef team — and one celebrity chef! It should be noted that long pants (jeans are acceptable) and slip-resistant closed toed shoes (such as sneakers) are required to take the class. Long hair must also be pulled back. Additionally, you will be provided a chef coat, hat, apron, and name tag to be worn during the class. Welcome to Palo Upon entering Palo, make sure you look up at this stunning light fixture! It’s designed to look like various types of pasta and meatballs! Very fitting, given you’re in an Italian restaurant. If you look closely, you’ll see several noodle shapes in the glass – such as angel hair and fettuccine — as well as the round pieces that are designed to represent the meatballs. Palo Light Fixture Once in the restaurant, we met Chef Salvatore, Palo’s Chef de Cuisine on the Fantasy. We were able to take photos with him, and learned he would be our instructor for the cooking class. Chef Salvatore We also got to meet the Celebrity Chef. And let me just say, he’s the cutest chef I’ve ever seen! Of course, it’s Chef Mickey!! We snagged some photos with the Big Cheese, and then it was off to the “galley” — the ship term for kitchen. Chef Mickey The first thing Chef Salvatore showed us how to make is a Margherita Pizza! This is one of Palo’s most popular dishes. Chef told us this pizza was named after Queen Margherita of Italy. It was made to honor her by using the colors of the Italian flag — red, white, and green — with mozzarella cheese (white), fresh tomatoes (red), and basil (green). Chef Salvatore Making Pizza Chef Salvatore explained the process of making the pizza – from kneading the dough to the correct order of the toppings. He was very fun and interesting to learn from — it was like being at a live cooking show. After his demonstration, it was our turn. Cooking Station Our individual cooking stations were arranged around the galley. We were each given our dough, which Chef told me is made fresh every single day. Also laid out were all the tools we’d need as well as the pizza toppings. It was time to get to work! Margherita Pizza Toppings Chef Salvatore and two other Palo chefs were walking around to assist us if we had questions. They were all incredibly friendly and eager to help! Don’t be shy about asking them for assistance or to ensure you’re doing it correctly. We had about 5 minutes to prep our pizzas, and I think it turned out pretty well considering I’ve never made Margherita Pizza before! The Finished Pizza Masterpiece Next up, Chef Salvatore taught us how to make Butternut Agnolotti. This is a stuffed pasta (similar to ravioli) filled with butternut squash and goat cheese! Chef began his demonstration by showing us how they make their pasta from scratch, every single day. Chef Salvatore Making Pasta After his pasta was complete, he showed us step by step how to make the Agnolotti. This included shaping the pasta, mixing the filling, stuffing the pasta, and cutting the finished product. As with the pizza, our turn was next! Pasta Cooking Station Luckily, we did not have to make our pasta from scratch. Once again, all the ingredients were perfectly portioned out for us and the chefs meandered between stations, assisting where necessary. When we were done, we plated our Agnolotti and were ready for the next course – dessert! The Finished Pasta Masterpiece For dessert, we met Chef Marshall, the executive pastry chef for the Disney Fantasy. He said if it’s got sugar in it — he’s in charge of it! Chef Marshall let us know we would be making a Limoncello Tart for dessert. Chef Marshall First, he showed us how to make the dough from scratch, and explained the proper baking procedure. He also showed us how to make the tart’s filling. Chef Marshall making the Limoncello Tart And when he was done, it was our turn again! As with the pizza and the pasta, our stations were all ready with the perfectly proportioned ingredients. Pastry Station We got to work, first making the dough from scratch as we were taught. Because we obviously couldn’t wait for all of these crusts to bake during the class, we were also given a pre-made crust to fill with our Limoncello filling. Finished Limoncello Tart and Crust I asked Chef Marshall if my baking was good enough to work on the Fantasy, and he said he sure — he needed someone to help separate eggs for the 120 dozen they go through making Crème brûlée EVERY SINGLE DAY. Yes, 120 dozen eggs a DAY, just on Crème brûlée. I don’t even think Gaston couldn’t wrap his mind around that many eggs! Palo Dining Room Next up, time to eat all the delicious creations we made! It’s important to note, we didn’t eat the actual dishes we created, due to safety regulations. That’s probably for the best, because we got to enjoy the same dishes — chef-prepared! First up, we tried one of Palo’s antipasti dishes — Coppa, Favas and Pecorino. As the name states, it’s coppa salume, fava beans, and sheep’s milk pecorino cheese. This was delightful! I am not even a huge fava bean fan, but combined with the nutty cheese and salty meat, it was a perfect bite. Palo’s sommelier also poured us a glass of wine that he selected to accompany the dish. Coppa, Favas and Pecorino Next up, we tried the Butternut Agnolotti, like we had prepared earlier. It was absolutely delicious. The chef topped it with some almond cookies, which provided a little crunch and complimented the sweet squash filling. Truthfully, this was some of the best pasta I have ever had. Butternut Agnolotti Of course we also tried the Margherita Pizza. The crust was perfectly cooked, the cheese was generous, and the basil was sweet. This simple but delicious pie was also a winner in my book! Margherita Pizza Lastly, we sampled the Limoncello Tart. We were also poured another glass of wine, again hand selected by the sommelier. The tart was again, a winner. It was a nice blend of sweet and tart, and you can distinctly taste the Limoncello. It was a perfect treat to cap off an incredible lunch! Limoncello Tart After dinner, there was a surprise waiting for us! Chef Salvatore — and Palo’s General Manager Salvatore (yes, they are both named Salvatore) — surprised us with these lovely bags! Palo Bag Inside the bags were our very own chef jacket, apron, and hat! We were also gifted a portfolio with a photo of Chef Mickey on the outside, and our photos with him and Chef Salvatore printed on the inside. Lastly, we received recipe cards for everything we learned to make! Palo Goodies Overall, the Palo “Be Our Chef” Cooking Class was excellent and truly lives up to the Disney standard. “Be Our Chef” Experience Specifics and How To Book “Be Our Chef” is $279 per person, which includes the cooking class, the meal, and the goodies. While it is a high-cost activity, it’s a very unique and well-done experience. Please note this adults-only experience is limited to 8 guests per class, so it is highly recommended you book in advance on the Disney Cruise Line website. The “Be Our Chef” experience is offered once per cruise in Tortola for eastern itineraries and Grand Cayman for western itineraries while the ship is in port. Prior to sailing, the event will be offered initially to Concierge Guests via shore-side reservations. If the event is not fully booked, any remaining openings will be available to all Guests. Passengers can make onboard reservations by visiting the Guest Services Desk. Guests who’ve booked reservations before their cruise must cancel 3 days prior to the sail date. Cancellations are not accepted for reservations that have been booked onboard. The full charge will apply to all cancellations that fall outside this window. Raise your hand if you’re guilty of stalking the Contempo Cafe pastry case for new cupcakes! Recently, we’ve loved the Churro Cupcake and the Millenial Pink Cupcake. In fact, it has been a few months since we went to Contempo Cafe for something other than a cupcake! But when I stopped by today (yes, for a cupcake) I noticed something new to me on the menu: Grilled Cheese and Tomato Soup. Well, twist my arm – I just had to order it. But, don’t worry… I found a fun cupcake too. Read on to find out more! The monorail and the Mary Blair Mural at Contempo Cafe The Grilled Cheese is made with three cheeses – Fontina, Monterrey Jack, and Boursin Garlic & Fine Herb – and is on Sourdough Bread. It is served with Tomato Bisque and your choice of fries, homemade chips, or veggie slaw. I opted for the homemade chips. Grilled Cheese & Tomato Soup with Homemade Chips The chips are “kettle-cooked” and so delicious. They are seasoned very well and have a very satisfying crunch. I’d certainly recommend them with any Contempo Cafe entree. They also were very tasty when dipped into the soup. Tomato Bisque Speaking of the soup, I was happily surprised by this Tomato Bisque. It was creamy, but not too thick and had a very pleasant, sweet basil flavor to it. I loved that it had bigger chunks of tomato in it as well. Tomatoes in the Tomato Bisque These tomato pieces were nice and soft, but not slimy. If you’re not a huge tomato fan because of their texture this may throw you off, but I found them a welcomed surprise! This soup was so good, I would order it on its own. Which is saying something, because I normally order tomato soup solely to dip my grilled cheese into it. Anyone else dunk their Grilled cheese into soup? So how was the main attraction, the Grilled Cheese? In short: pretty good! The bread was buttered and toasted perfectly, which is crucial to a good Grilled Cheese. Grilled Cheese Close Up I really liked the mixture of cheeses, as well. The Boursin was the real stand out. It provided a creamy texture, and the garlic and herb flavor elevated this sandwich from your traditional Grilled Cheese. Without it, this would have been pretty lackluster. Overall, this wasn’t the most exciting Grilled Cheese I’ve ever eaten, but I would definitely order it again. Now for the reason for our visit: a new(ish) cupcake! Contempo Cafe has had a whole fruit salad of cupcakes in the past – including Watermelon, Apple, Cherry and Banana! Now we welcome the newest fruit to the bunch- Orange! Orange Cream Cupcake This beauty is the Orange Cream Cupcake. It’s an Orange Cupcake with Cream Filling and Sweet Buttercream Frosting. Orange Cream Cupcake Just look at all that Buttercream! And those Mickey Ears aren’t just for show. Like many Disney cupcakes, they are chocolate! White chocolate in this case. So go ahead, and bite one – you know you want to. Orange Cream Cupcake Cross Section Overall, this tastes like Orange Cream Soda in cupcake form. The cake itself is orange flavored and very moist. It’s not overly sweet and I could have eaten several pieces of it by itself! The creme custard filling is a perfect creamy texture – not too grainy or overly sugary. It’s good on its own, but much better paired with a bite of the cake. The buttercream was a little light on this one compared to other Contempo cupcakes, but that made it a better option for someone who’s not looking for sweetness overload. (Your mileage may vary on the amount of buttercream, so be prepared.) Once again, Contempo Cafe is a winner! There’s a reason it’s a DFB favorite — it’s a great spot for something quick and tasty, and always has something fun in the pastry case. It may not be as flashy as other locations, but it’s proved time after time that it’s reliable for a delicious meal and sweet treat! We will certainly be back (again and again). Walt Disney Archives founder Dave Smith passed away in Burbank, California, on February 15, 2019. He was 78. Dave dedicated his four-decade career at The Walt Disney Company to preserving Disney’s precious treasures from film, television, theme parks, and beyond. Named a Disney Legend in 2007, Dave was beloved by fans around the world for his wide knowledge of the Company’s rich history, which he shared in books and through his popular magazine column “Ask Dave.” “I’m deeply saddened to learn of Dave Smith’s passing,” said Bob Iger, Chairman and Chief Executive Officer, The Walt Disney Company. “He was the unsung hero of Disney’s history who, as our first archivist, spent 40 years rescuing countless documents and artifacts from obscurity, investing endless hours restoring and preserving these priceless pieces of our legacy, and putting them in context to tell our story. Dave was a true Disney Legend, and we are indebted to him for building such an enduring, tangible connection to our past that continues to inspire our future.” Dave was hired in 1970 by Walt’s brother—and The Walt Disney Company co-founder—Roy O. Disney, and his first responsibility was cataloguing every item inside Walt’s office suite, which had been left untouched after Walt’s passing four years prior. Thanks to Dave’s meticulously detailed notes and records, the Archives was able to restore the suite in 2015, and today Disney employees are able to visit and draw inspiration from this remarkable space. During his time as Disney’s Chief Archivist, Dave grew the Archives from a simple one-person department to a model among corpo­rate archives. He was regarded by fans and historians as the final authority on matters of Disney history, and was an active member of the Society of California Archivists. He served from 1980 to 2001 as Executive Director of the Manuscript Society, an international association of collectors, dealers, librarians, archivists, and others interested in manuscript material. Born and raised in Pasadena, California, the child of librarians and educators, Dave earned a B.A. in history and a Master’s Degree in Library Science from the University of California at Berkeley. Before coming to Disney, he gained library and archives experience working in the Manuscript Department of the Huntington Library in San Marino, California, interning at the Library of Congress in Washington, D.C., and serving on the staff of the Research Library at U.C.L.A. Dave wrote extensively about Disney history, with regular columns in Disney fan publications and websites, as well as authoring, co-authoring, and editing numerous articles and books on Disney history, including the official Disney encyclopedia Disney A to Z, Disney: The First 100 Years, The Quotable Walt Disney, Disney Trivia from the Vault, and The Ultimate Disney Trivia Books 1, 2, 3, and 4. In October 2007, Dave was honored with the prestigious Disney Legend Award. A resident of Burbank, California, Dave retired in 2010 after his 40th anniversary with The Walt Disney Company and continued working for the next nine years as a consultant for the Company, with the title of Chief Archivist Emeritus. Austin Dillon, the defending Daytona 500 Champion, brought a little bit of his own magic to Magic Kingdom Park recently where he surprised a young fan, Jordan Wade, with an unforgettable Disney day. Austin and Jordan met last year just days before the Daytona 500, when Austin gave Jordan an autographed hat. In return, Jordan gave Austin a lucky penny. And it truly was lucky, because days later Austin actually won the Daytona 500! As a thank you, Austin wanted to do something to thank Jordan, and what better way than a trip to the Walt Disney World Resort? What started out as a fun-filled day at Magic Kingdom for Jordan turned into the surprise of a lifetime with a special visit from Mickey Mouse and a photo with the Daytona 500 trophy. The Pineapple-Whip Swirl Cupcake — or, as we’ve been referring to it, the Dole Whip Cupcake — at Intermission Food Court at Disney World’s All Star Music is something of a two-for-one treat. Pineapple Whip Swirl Cupcake Take the flavor of the beloved Pineapple and Vanilla Swirl Dole Whip, and combine it with a cupcake! The touch of pineapple pixie dust comes by way of a tiny pipette of pineapple-flavored sauce with which to infuse or drizzle over the cupcake. Pineapple Whip Swirl Cupcake On its own, the sauce is nearly sickeningly sweet, but when drizzled on, it tastes great with the icing. And the result is that the whole thing together really does resemble a Dole Whip in flavor! Pop-Up Disney! ©Disney This spring, guests at Pop-Up Disney! will be transported “through a visually and whimsically immersive experience celebrating 90 years of the one and only Mickey Mouse, and his darling, Minnie Mouse.” In the limited-time exhibition, themed rooms will present vivid displays inspired by Mickey. And every room will offer “selfie-worthy surprises” along with “fun and fabulous photo ops.” Pop-Up Disney! ©Disney Disney shares the artwork above as an example, stating that the super-size bow sofa will allow guests to “pop into the portrait and take a seat on Minnie’s plush sofa or pose under Minnie’s giant bows and hearts.” Pop-Up Disney will require a ticket to enter, and pricing information will be revealed soon, along with an on-sale date.
