  4. Spring is a favorite season at Disney Parks – and this year, we’ve got even more in store for you. With a new festival at Shanghai Disney Resort, a dazzling celebration at Disneyland Paris and a long list of limited-time experiences at every resort around the world, a springtime visit is an absolute must. Today, we’re sharing a look at how you can soak up the sun and celebrate with us. We’re excited to share that as part of Shanghai Disney Resort’s first spring season, we recently kicked off a brand new Egg-tastic Celebration. This 10-day festival is filled with plenty of Easter-inspired events and entertainment, including a scavenger hunt, surprise appearances from favorite Disney characters and spring-themed food and beverage items. This year, more than one hundred Disney characters are taking part in Hong Kong Disneyland’s spring celebration. See if you can spot your favorites in the Disney Friends Springtime Processional, exclusive to the resort. Mickey, Minnie and the rest of the gang will be dressed in their most dapper outfits atop parade floats adorned with beautiful blossoms. Tokyo Disney Resort’s ever-popular Disney’s Easter program is back this year through June 14, featuring the mischievous Usatama bunny-eared egg characters known for causing mayhem all over both parks. Did you know that April 12 is Disneyland Paris’ official anniversary date? The 25th anniversary celebration has already begun with a dazzling array of entertainment offerings including a new parade, two daytime castle shows and a nighttime spectacular. Jump into the stories of some of your favorite Disney movies as scenes are projected onto Sleeping Beauty Castle during “Disney Illuminations,” or transport yourself into a galaxy far, far away on Star Tours: The Adventures Continue. Of course, it wouldn’t be spring without a visit to the Epcot International Flower and Garden Festival. Catch a glimpse of our signature topiaries inspired by classic Disney characters and treat your taste buds to foods made from the freshest ingredients. Then hop over to Magic Kingdom Park, where you’ll find Mr. and Mrs. Easter Bunny greeting guests by Town Square through April 16. As a treat, a special Easter pre-parade will also appear before the Disney Festival of Fantasy Parade on April 15 and 16. Here you can spy the Great House part of the resort at the far right, the watercraft marina, and towards the center of the photo, the resort’s impressive Lava Pool.   6. In the exciting/frustrating world of Disney World ADRs (Advance Dining Reservations), some restaurants just seem to be tougher to get into than others. And the Hollywood Brown Derby in Disney’s Hollywood Studios is one of those more difficult tickets. So in 2013, the Disney gods (or Imagineers or restaurant planning mavens) smiled and — poof!– the Hollywood Brown Derby Lounge was born. Hollywood Brown Derby Lounge Bar And it was good. Right from the start, the Lounge became one of our favorite places to drop in unannounced. We could get all the glittery Hollywood-ness of the Hollywood Brown Derby restaurant without an ADR! Hollywood Brown Derby Lounge The Hollywood Brown Derby Lounge is a walk-up outdoor spot (with a section of ‘indoor patio’ seating as well). Basically it’s like you’re every Hollywood starlet who dines al fresco with the hopes of gracing a tabloid cover. Only you’re you, and you’re in Disney’s Hollywood Studios, and you’re more likely to wind up accidentally photobombing someone’s vacation selfie. Still. It’s almost the same. Inside Patio Seating at Brown Derby Lounge We love, LOVE the food here. We have raved about (and continue to salivate over) the Hollywood Brown Derby Cobb Salad (it’s kind of the restaurant’s signature dish), and you can order the appetizer portion in the Lounge. Genius! And then there’s the Grapefruit Cake. We loved it so much we even figured out how to make it! Seriously, guys: the list goes on and on. But on this visit we were after something that maintains a coveted spot #OnTheList. (That’s our ever-growing bucket list of Disney food and drink that we can’t get enough of. (We know we’re not the only ones with a List. C’mon, y’all, ‘fess up.) Yes, that’s right. We ordered a Margarita Flight. Brown Derby Lounge Margarita Flight And because we love you and will do anything in the name of research for you, we also ordered a Martini Flight. I believe Maui said it best: You’re welcome. Brown Derby Lounge Martini Flight But also: Thank you. Because we love these drinks. The fact that there are three different varieties in each flight makes these a literal wayfinding mission for your tastebuds. And they will be feeling happy when you’re done. So happy. If you know what I mean. The Margarita Flight (which we tried and loved a few years ago) features three distinctive flavors. Brown Derby Lounge Margarita Flight Menu The Classic is strong — but in a good way. It’s exactly what you want when you order a margarita, and then the bartender pours a Grand Marnier float on top, and you’re sort of at the next level of Classic Margarita-ness. Brown Derby Lounge Classic Margarita Of course the tequila, cointreau, lime juice, and sweet and sour mix are a marriage made in cocktail heaven. A slice of lime and a salt rim complete the Classic Margarita. And she’s a beauty. Brown Derby Lounge Classic Margarita The next marg incarnation is the Mango Margarita. Talk about transporting us to the tropics (you know, in case central Florida isn’t tropical enough for ya)! Brown Derby Lounge Mango Margarita We love the bright yellow/orange color, but it’s the taste that’s the real standout here. The Mango Margarita is crafted with tequila, cointreau, mango juice, and sweet and sour mix. To finish off, it’s garnished with an orange slice and a sugared rim. So. Good. Like who-cares-if-it’s-95-degrees-with-100%-humidity good! We love the sweet/citrusy/tangy combination. Brown Derby Lounge Mango Margarita To finish off the Margarita Flight, the leading lady with the strongest sweet-meets-sour vibe: the Pomegranate Margarita. Brown Derby Lounge Pomegranate Margarita It’s, like, perfectly pink. And the marriage of tequila, pomegranate liqueur, and sweet and sour mix works so well. We love that bright red cherry on top too. (Not for nothin’, we won’t complain about the sugar rim either.) Brown Derby Lounge Pomegranate Margarita The Margarita Flight is a bargain at $14.25 if you ask us. Your palate can play with each flavor, and you get to figure out what works best for you. And if all three work best for you, we simply can’t and won’t judge. In fact, we concur. Go on with your marg self. The Martini Flight (also $14.25) is another of our favorite Derby Lounge drink items. Brown Derby Lounge Martini Flight Golly, it’s pretty. Like little, tiny jewels (filled with liquid goodness). Brown Derby Lounge Martini Flight We like to start with the Classic Gin martini. It sort of sets the stage for the variations that follow. Brown Derby Lounge Classic Gin Martini The Classic Gin martini is created using cucumber and rose petal-infused gin and dry vermouth. It’s garnished with an enormous green olive. (Your olive may vary.) Brown Derby Lounge Classic Gin Martini It’s essentially the same size as the door Rose was floating on at the end of Titanic. But it tastes better. We love the briny olive and the careful balance of liquor on liquor. The Citrus Vodka martini is the citrus-lover’s dream cocktail. It’s a thoughtful blend of citron vodka, cointreau, and simple syrup. Brown Derby Lounge Citrus Vodka Martini There’s a little bit of lemon peel floating in there as well, to drive home that citrusy profile. A smattering of sugar on the rim plays nicely with the tart citrus. Brown Derby Lounge Citrus Vodka Martini The final member of the Martini Flight trio is the Derby Cosmo, and it gets a bunch of thumbs up from us. (Executive Derby decision: you can give more than two thumbs up if you want. It’s pretty much necessary here.) Brown Derby Lounge Cosmo Martini What’s so special about this drink is the inclusion of pear vodka. Combined with the Grand Marnier, a splash of cranberry juice, and a buoyant cherry, it finds a balance that can sometimes be lost in Cocktail Land. The pear vodka tones down the sweetness to make the Derby Cosmo a unique and utterly drinkable drink. Brown Derby Lounge Cosmo Martini Wanna see it all in action? Check out our video review! Overall You can not go wrong at the Hollywood Brown Derby Lounge. The restaurant is inspired in all ways by a classic and world-renowned (real) Hollywood establishment, and every time we visit the Lounge, we get to partake in that Old Hollywood world. There’s something sentimental about it, and the food and drinks always impress — so we just keep going back. The Margarita and Martini Flights are a super fun way to try different flavors but still get the old standbys (done really, really well).   12. The 2017 Epcot Flower and Garden Festival is in full bloom right now, and this year The Berry Basket joined the Outdoor Kitchens. The Epcot Flower and Garden Festival is Officially Underway! The Berry Basket is the place for berry lovers, offering savory and sweet dishes! The Warm Wild Berry Buckle with Pepperberry Sorbet is one of our Best of the Fest! The warm cake topped with cool and spicy sorbet was amazing! Warm Wild Berry Buckle from The Berry Basket It was so good that we’re thinking of making some right now! The recipe calls for strawberry ice cream as a topper instead of the Pepperberry Sorbet, but we bet it’ll still be delicious! There are three components for this recipe, so set aside some time to bake. Warm Wild Berry Buckle from The Berry Basket Makes 8 Berry Compote Ingredients 2 tablespoons lemon juice 3 tablespoons orange juice 1/2 cup sugar 2 tablespoons cornstarch 1/2 cup frozen blackberries, thawed 1/2 cup frozen raspberries, thawed 1/2 cup frozen blueberries, thawed 2 cups quartered fresh strawberries, divided 2 cups fresh blueberries Instructions 1. Combine lemon juice, orange juice, sugar, and cornstarch in a large bowl. Add thawed blackberries, raspberries, blueberries, and 1 cup of the fresh strawberries. Puree using an immersion blender until smooth. 2. Gently fold in the fresh blueberries and remaining 1 cup of strawberries. 3. Set aside. Oatmeal Streusel Ingredients 1/3 cup all-purpose flour 1 tablespoon ground cinnamon 1/4 cup brown sugar 1/3 cup oatmeal 1/2 cup butter, melted Instructions 1. Preheat oven to 325°F. Line a baking sheet with parchment paper or a silicone baking mat. 2. Mix all-purpose flour, cinnamon, brown sugar, and oatmeal in a medium bowl. Pour melted butter over dry ingredients and mix until wet. 3. Sprinkle mixture on prepared baking sheet and bake for 8 minutes. Cool for 20 minutes and crumble. Cake Ingredients 1 1/3 cups all-purpose flour 2 1/2 teaspoons baking powder 1/4 teaspoon salt 1/3 cup shortening 1 cup sugar 2 eggs 2/3 cup milk 3/4 teaspoon vanilla extract Instructions 1. Preheat oven to 325°F. Spray eight 8-ounce ramekins with non-stick cooking spray. 2. Combine all-purpose flour, baking powder, and salt in a small bowl. Set aside. 3. Cream shortening and sugar in the bowl of an electric mixer fitted with a paddle attachment until fluffy. 4. Beat in eggs, one at a time, making sure to scrape the sides of the mixer. 5. Add 1/2 of the flour mixture, and half of the milk, mixing well. Add remaining flour and milk. Mix in vanilla. Baking Instructions 1. Place 1/3 cup of cake batter in the bottom of each prepared ramekin. Top with 1/3 cup of berry compote. 2. Bake for 25-30 minutes, until cake is set. To Serve 3. Cool for 5 minutes. Turn warm berry buckles onto a plate. Top with oatmeal streusel and strawberry ice cream. YUM! Will you be whipping up the Warm Wild Berry Buckle from The Berry Basket? Let us know in the comments. Some of the most compelling images snapped at Walt Disney World Resort this week were of the U.S. Navy Blue Angels, who performed a spectacular flyover at Magic Kingdom Park on Thursday, April 6. The Blue Angels executed two planned passes above Magic Kingdom Park at speeds of more than 250 mph, with a highlight being a “Delta Break” maneuver they performed 500 feet above Cinderella Castle.   15. Disney’s Vero Beach Resort has been undergoing extensive renovations. And recently, Disney Food Blog was invited to see everything that’s happening there. Disney’s Vero Beach Resort The resort is located on Florida’s East Coast, just south of the Cocoa Beach area. If you’re driving there after a stay at Walt Disney World, it will take you a little less than two hours to get there. When I arrived, I was surprised by the charming and relatively small size of the resort. I think I’ve grown accustomed to sprawling WDW resort complexes! The lobby, with its central courtyard and atrium, reminded me of a beachy Grand Floridian. Resort Lobby While we were waiting for lunch at the resort’s restaurant, Wind and Waves Grill, to begin, I decided to take a look around. Come along with me on the tour. Atmosphere Many of the touches of the resort had that Disney charm, however. En route to the restaurant, I spied this kid-sized TV viewing area. Children’s TV Viewing Area Family fun is the name of the game, as the resort also hosts a weekly Pirates Night, which includes a buffet-style all you care to enjoy barbecue spread, characters, photo opps, and games. Pirate’s Night I ventured outside to take a look around and found lots of laid back beach charm. I instantly wished that I’d brought my swimsuit, big sunglasses, and a good book to read. Rockers Pool The Florida coast plays host to another important visitor — sea turtles. The beaches are the primary nesting ground for the Loggerhead Turtle, and Disney’s Vero Beach Resort is committed to making their stretch of coastline welcoming for the famales who come ashore to lay their eggs. Sea Turtle Nesting Information Of course, the biggest draw of all is the beach, and guests were enjoying the sand and waves, even though it was February. Beach View Wind and Waves Bar and Market After a quick walk around the resort, we turned our attention to food and drink offerings. The Wind and Waves Bar is situated right beside the pool for walk-up convenience as guests enjoy a day of fun in the sun. Wind and Waves Bar Around the corner, you’ll find the Wind and Waves Market, which offers counter service as well as grab and go items (including refillable mugs). Wind and Waves Market Wind and Waves Market Menu I was most excited to find many of my favorites from Walt Disney World here. Dole Whip, y’all! Dole Whip Sign The pastry case also provided some serious temptation. Wind and Waves Market Pastry Case Jumbo Cupcakes and Muffins were beautifully presented, and looked big enough to share. Cupcake Mickey-Shaped Cookie Sandwiches were almost too cute to eat. (Almost.) Mickey Whoopie Pie And look what else we found — Mickey-Shaped Pretzels! Mickey Pretzel The Wind and Waves Market is also your stop for snack items and bottled drinks. We also found full bottles of chilled wine and beer, packaged snacks, refillable mugs, and souvenir cups. Wind and Waves Market Bulk Items Crush Sipper Mickey Krispies As we concluded our tour of the Market, it was time to make our way to Wind and Waves Grill for lunch. Wind and Waves Grill The restaurant was recently overhauled, as the resort sought to create a more welcoming and relaxed dining experience for guests. While the staff takes great care to utilize local ingredients in imaginative ways, you won’t find a stuffy or formal atmosphere. The small dining area — only 68 seats total — offers sweeping views of the enclosed sun porch and the Atlantic Ocean beyond. View and Seating Seating is mixed, a combo of cozy booths and comfortable wooden chairs. Seating The exhibition kitchen allows guests to observe the kitchen staff as they prepare meals. Wind and Waves Kitchen As we began our meal, I noted that we were provided with paper straws, a safety measure for the marine animals that share this area. Each of our courses were paired with locally-brewed Craft Beer and Florida Fruit Wines. Paper Straws to Protect Sea Turtles and Other Sea Life Our lunch offered tasting portions of regular menu offerings. Our first course was the Jumbo Lump Crab Cocktail. This cold take on a crab cake combined Avocado, Hearts of Palm, Herb Mayonnaise, Petite Greens, and Florida Citrus Vinaigrette in a refreshing starter that was both light and luxurious. Jumbo Lump Crab Cocktail Next, we moved onto Florida Gulf Shrimp and Grits. The familiar dish offered fresh, local flavors and featured Local Shrimp, Tomato Broth, Pickled Pepper Relish, Espellette and Corn Shoots atop Stone-Ground Grits. Shrimp and Grits For our next course, the chef offered Grilled Pork Tenderloin served on a bed of Mushroom Risotto. The Black Truffle Butter, Port Wine Syrup, and Crispy Sage that garnished the dish added beautiful color and a terrific balance of flavor. Pork Tenderloin Our meal ended on a sweet note with Wind and Waves’ Signature Turtle Sundae, offering a combo of house-made Salted Caramel Ice Cream, Candied Pecan Brittle, and Chocolate Sauce. Signature Turtle Sundae The sweet little Chocolate Sea Turtle topping the sundae is also house-made, and was surprisingly delicious. (I skipped the pic of the perfectly tempered chocolate melting on my fingers.) Chocolate Sea Turtle — Up Close It was a great ending to a lovely meal. Overall This was my first visit to Disney’s Vero Beach Resort, but I hope it won’t be my last. The resort is beautiful and offers guests a laid back, old-fashioned beach vacation experience, set in the heart of Florida’s Treasure Coast. It’s an easy distance from Orlando too, making it a great companion to a Disney World vacation. You may think that the resort is just open to Disney Vacation Club (DVC) visitors, but it’s not. Anyone can book a room here. Our lunch was delicious, but beyond that, I was also impressed with Chef Anthony’s commitment to using local ingredients. Seafood and produce are locally sourced whenever possible. And in addition to the dining options you’ve seen here, guests can also enjoy Goofy’s Beachside Character Breakfast, which takes place Saturday mornings from 7:30–11:00AM. Unbeknownst to their captor, Rocket has escaped and is enlisting the Collector’s VIP guests for help. Guests board a gantry lift, which launches them into a chaotic and hilarious adventure as they join Rocket in an attempt to break his fellow Guardians out of captivity. After breaking out of the Collector’s Fortress, you may run into Star-Lord and Gamora on their way to escape aboard the Milano, with Star-Lord stopping to fire up his old-school boom box and get a dance party started.   18. We always love a trip to Disneyland’s Hungry Bear Restaurant! Hungry Bear Restaurant in Critter Country This place has some great food, but we really love them for their desserts! Who can forget that super cute Lemon Bumblebee Cupcake (make it at home with this handy recipe), or the individual Blueberry Pies? But more than anything — Hungry Bear knows a thing or two about making some really amazing Funnel Cakes. I can’t get enough of their Churro Funnel Cake! Sigh. Where do I wish I were right now? And now, you do too. Churro Funnel Cake And the seasonal Apple Pie Funnel Cake is crazy good. Apple Pie Funnel Cake And so, when our Dining in Disneyland pal Heather Sievers spied the another entry into the Funnel Cake Genre, we were ALL IN. Behold, the Blueberry Lemon Funnel Cake. Blueberry Lemon Funnel Cake at Hungry Bear Restaurant The base may be a plain Funnel Cake, but that’s just the beginning. On top, they add Blueberry Compote, Lemon Frosting Drizzle, Whipped Cream, and Powdered Sugar. Perfect summer flavors!! Blueberry Lemon Funnel Cake — Up Close! And it’s just as incredible as it looks! Crispy Funnel Cake, sweet Blueberries, a tangy Lemon Glaze — and a Mickey Whipped Cream face! Does it get any better? It’s on the menu for now, but no telling how long it will stick around — so get it while you can! Each month I will be sketching from the field or Plein Air, as it’s called in the art world, from a new, inspiring location in our Disney Parks and then sharing my sketches and experiences here on the blog each time. Today, I continue my Sketches from the park series as I started off early this morning with a fantastic view of Epcot’s World Showcase Lagoon. I was immediately taken by Spaceship Earth looming in the distance, which started to get a great highlight from the sun rise this morning as it hit the edge of the giant sphere. Then, I sketched in a few details around as I noticed all the colors coming together and these great reflections in the water in the foreground. There is nothing quite like experiencing that sunrise in World Showcase as everything starts to come alive when the sun starts to hit all the countries and awaken them before your eyes. It really is a special moment in the morning that inspires me every time I am out there sketching in the park.
