We are a couple days back from the Raglan Road Master Chef Class in Ireland! And after recovering a bit from the go-go-go pace and jet lag, I’d like to share with you a few more glimpses into my time there. The Cooking School at Dunbrody House Hotel Today, we step into the kitchen to get behind-the-scenes insight into how Chef Kevin Dundon and his team create the recipes that we enjoy on Raglan Road’s menu and during special functions. Creating the RecipesIf you followed along during our coverage of the #RaglanRoadTrip, then you know that Master Chef contest entrants were tasked with creating a three-course menu that would be featured at Raglan Road’s upcoming tenth anniversary celebration this October. Sancerre and Irish Butter — How Could We Go Wrong? As it turns out, this exercise set the stage for the curriculum in cooking school this week! Chef Dundon took each of the finalists’ menus, chose one dish, and refined it. The resulting collaboration turned in five dishes that were at once original and recognizable — but also over-the-top delicious. Chef Dundon Creates and Heather Takes Notes Watching the process was interesting in that it gave each of us the chance to see how recipe development for Raglan Road takes place. Starting with the seed of the finalists’ recipes, Chef Dundon and the finalists experimented with the dishes and tweaked until they were just right. He cooked as the finalists took notes. And at the end of the day, each person tested how well they paid attention by cooking the dish all over again. (They all did great, by the way.) One of the Winning Dishes — Flash Fried Oyster Butter Soup with Honey Foam I think the biggest takeaway for all of us was the concept of looking for fresh inspiration, applying classic techniques and seasonal flavors, and creating something entirely new. Sampling and Taking It All In It was a fun and educational way to spend the morning, and it was especially interesting know that this is the same type of process Chef Kevin follows regularly to create recipes for his restaurants, cookbooks, and columns. Our partners at Oriental Land Company shared last week that a new attraction themed to the world of the Disney•Pixar film “Finding Nemo” and its upcoming sequel “Finding Dory” (to be released in 2016) will open in Port Discovery at Tokyo DisneySea Park in spring 2017. Guests will board a submarine that “shrinks” to the size of a fish and uses a ride system that seamlessly blends visuals from the films with a motion system. In this immersive underwater experience, guests will be able to explore the vast ocean from the same point of view as Nemo and Dory and meet different characters and make new discoveries each time they ride. The development of this attraction is only possible because of the collaboration between Walt Disney Parks and Resorts and Oriental Land Company. The teams have worked together to create new, popular attractions and entertainment at Tokyo Disney Resort and make the resort one of Japan’s most popular tourist destinations. We are also pleased that the teams will continue this collaboration as they work with the production staff of “Finding Dory” who will help create the visual images for this attraction. A couple of months ago, I shared the first piece from the Disneyland Resort Diamond Celebration “Decades” collection created by Jeff Granito. The first piece in the series of “Decades” art (1955–1964) will debut today. Here’s a look at some of the exciting merchandise featuring the art. Mickey’s Birthdayland became Mickey’s Starland at Magic Kingdom Park this week in 1990. A few of the local residents gathered by the town sign to commemorate the name change. Mickey’s Starland eventually became Mickey’s Toontown Fair in 1996. Now, of course, it’s home to Storybook Circus, where you can fly on an elephant, feel the thrill of The Barnstormer or visit some familiar friends at Pete’s Silly Sideshow.
