We have big news from Epcot today! The 2016 Epcot Flower and Garden Festival Menus are Finally Here! With less than two weeks to go before the opening of the 2016 Flower and Garden Festival, we have the full list of menus for the super popular Outdoor Kitchens! Mark your calendars — the Festival lasts from March 2 through May 30. These Outdoor Kitchens, which are similar to Marketplace Booths that dominate the Epcot Food and Wine Festival, feature delicious small plates and all kinds of refreshing beverages that allow you to taste fresh flavors from the garden. Cinderella Topiary at the Flower and Garden Festival We’ve Loved This Violet Lemonade! There are lots and lots of new things to try. A brand new Outdoor Kitchen will debut in 2016. La Isla Fresca will feature food and drink with Caribbean flair. And we’re excited to see plenty of our favorites return, like the Beef Brisket Burnt Ends Hash with White Cheddar Fondue and Pickled Jalapeños from the Smokehouse Outdoor Kitchen! It’s true – it does occasionally rain at the Disneyland Resort. As a photographer there’s a silver lining around every cloud, and I welcome a rainy day every now and then because of all the new photo opportunities it presents. It’s easy to make the best of a rainy day with your camera if you just look around. There’s an abundance of flowers here that are waiting to be photographed with raindrops on the petals, and you can look for unusual or interesting reflections in puddles or on wet surfaces. If you look closely, you may even find umbrellas with Mickey Mouse ears. There are a lot of photo opportunities during the day when it has been raining. But personally, my favorite by far is heading over to Cars Land after dark. With so many different colored neon lights, the photo opportunities are everywhere. History lovers I have something for you! Now more than ever is a great time to see “Re-Discovering America: Family Treasures from the Kinsey Collection” a world renowned collection of rare art, unique artifacts, and documents on display at the American Adventure Pavilion at Epcot. Some intriguing new pieces have been added to the exhibit that takes you on a stroll through the pages of America’s history and showcases the influence of African-American culture. Touch screens and guest-activated lanterns with narration by Whoopi Goldberg, Diane Sawyer and a host of other celebrities also help bring the history to life. The exhibit is open daily to guests. The acclaim for Jock Lindsey’s Hangar Bar keeps on coming. Already a guest favorite at Disney Springs, the venue is capturing industry attention too and getting awards for its refreshing concoctions. Grab a seat inside or on the canvas-covered steamboat where you can order one of the VIBE Award-winning beverages. VIBE is the leading beverage industry forum that showcases national trends, insights and opportunities. While the food is delicious small bites (deviled eggs with lump crab filling, goat-cheese-stuffed dates, grilled brats), the VIBE Award is all about the creative beverage program, inspired by the adventurous story of the pilot of Indiana Jones, Jock Lindsey. The beverages at this exotic watering hole are inspired by Jock’s travels in North America, South America, Europe, Africa, Asia and Disney Springs. For example, the menu notes that the Hovito Mojito and The Bitter Barkeep cocktails are from Jock’s travels to South America, The Aviator’s Flight and The Scottish Professor cocktails are from his European adventures, Anything Goes and Bedtime Story cocktails are from his Asian travels and the Cool-Headed Monkey and Safari Sangria cocktails are from his African excursions. “The attention to detail is what sets this beverage menu apart and creates a competitive differentiation from other beverage menus,” said Brian Koziol, Concept & Development Director of Food & Beverage for Walt Disney Parks and Resorts. The drink menu features eight signature cocktails, four signature non-alcoholic drinks, a beer list with local craft options, an impressive wine list featuring selections from around the world and locally sourced spirits. Select signature cocktails are served in signature souvenir glassware, including Reggie’s Revenge made with Florida Cane ‘Orlando Orange’ vodka, Midori melon liqueur, white cranberry juice and fresh lime juice and Cool-Headed Monkey made with Starr African rum, Van Der Hum tangerine liqueur, fresh lime juice, watermelon and pineapple juice. With two very energetic and playful tabby cats (named Pinkie and Index), it would be easy to assume that I’m a cat lover. But I’m also a HUGE fan of dogs, just like many of my fellow Walt Disney World Cast Members. This past weekend in downtown Orlando, hundreds of them leashed up their canine buddies for the annual Paws in the Park event to support Pet Alliance of Greater Orlando. The nonprofit provides care for more than 8,000 homeless dogs and cats, matching many of them for adoption in good homes. Our own Disney Dogs Pack turned out to be the “Top Dog” this year, raising over $17,000 for this woof-worthy cause. Of course, there was one Disney dog who wouldn’t dream of missing this event. Mickey Mouse’s pal, Pluto, posed for photos with other “ paw-ticipants” and showed some puppy love – after all, it was the day before Valentine’s Day. In addition, parents, children and their best friends enjoyed bonding time together in the Disney Kids and Family Zone. They engaged in a variety of interactive activities such as solving puzzles, and learning about conservation and healthy living. To watch more of the fun events, take a quick look at this video. It’s been a while since we have taken in dinner at The Wave…of American Flavors. Time to take care of that right now! Learn About: The Wave…of American FlavorsDisney World Restaurants The restaurant, located in Disney’s Contemporary Resort, is truly a hidden gem. This spot masquerades as an unassuming, run of the mill table-service restaurant, but they approach their menus and food sourcing a lot like the high-end signature restaurants on property do. It’s well worth a visit for breakfast, lunch, or dinner; and it’s just a short walk or monorail ride from the Magic Kingdom! Let’s take a look. Atmosphere Have you ever been to The Wave? If not, your first challenge is to find it! Head to the Contemporary Resort. If you’re monorailing over, you’ll land on the Fourth Floor Concourse, so take the escalators or elevator down to the first (ground) floor. The Contemporary Lobby Level The restaurant occupies one back corner of the lobby. Head past the front desk to the right, and you’ll spy it. Look for the sign and the magic lighted tunnel to lead you on your way. The Wave Entrance Once inside, you’ll see that The Wave offers an interesting, futuristic-ocean vibe. Podium To the right, you’ll see this groovy lounge that always reminds me a little bit of a cruise ship. There are several of these along this back wall, flanking the bar. Outta This World Lounge Seating Everywhere in the dining room, you’ll see echoes of the “wave” motif. Here, though, it almost seems to echo amber waves of grain rather than something from the sea… Dining Room Well. Except for these vaguely jelly-fishy lights. Ceiling Lanterns But interesting decor aside, there is something that you should really pay attention to at The Wave, and that’s the drink selection. The restaurant not only features some interesting signature cocktails, but they also offer New World wines exclusively — primarily screw-top (check out this post for more info on that) — as well as organic beers. It’s a great chance to try something new. The Wave Bar Seating is reasonably comfortable, although I prefer the padding of the banquettes to the straight-back chairs. Wave Tables and Banquette Seating But with these tables situated rather closely, I usually opt for a table in the center of the room. Table Seating Of course, if I can snag one of these high backed, more private booths, I’ll take it! Perfect Brunch Table at The Wave Now that we’ve had a bit of a look around, let’s see what we enjoyed during our visit earlier this month. Eats The Wave is definitely one of the most market driven, non-signature spots that you’ll find at Walt Disney World. So know that while some things may be around during your visit, it’s likely that the dishes we feature may not be available for long. Menus, which feature local farms, change regularly. To begin our review of the menu, we’ll take a look at Specialty Cocktails, Draft Beers, and Non-Alcoholic Specialties. In addition to a few Wave exclusive cocktails, we see some of the aforementioned Organic Beer options available on tap. Organic is a recurring theme here, as you see it pop up in the N/A choices as well. Cocktails and Beer Menu — Click to Enlarge Wine lovers will find many options to choose from, both by the glass and the bottle. As previously noted, all of the selections are from New World spots — the United States, South America, Australia, New Zealand, and Africa. Previously, the restaurant featured almost exclusively Southern Hemisphere wines, but they seem to have expanded a bit northward. Wine Menu — Click to Enlarge I went with a favorite varietal of mine, Riesling. This particular one was a Dry Riesling by Chateau Tanunda from Australia’s Barossa Valley. And it did happen to have a screw cap closure — a feature that was previously the hallmark of all Wave wines. Chateau Tanunda Dry Riesling Onto the Main Menu! We immediately saw several items that piqued our interest. Menu — Click to Enlarge We began with The Wave’s complementary Bread Service, which included Butter with an ample sprinkle of Sea Salt. Bread and Butter For our first appetizer, we chose The Wave Cheese and Charcuterie Board, which features a combination of American Hand-Crafted Cheeses and Artisan Cured Meats. Accompaniments included Nuts (including almond powder), Grapes on the Vine, Fruit Preserves, Honey, and Toasted Baguette Rounds. This was, of course, killer. Cheeses were Mt. Tam Brie from Cowgirl Creamery, Cabot cloth-bound Cheddar, and Smokey Blue — also from Cowgirl. The portions were generous (something you don’t see everywhere in Disney World when it comes to cheese plates), and I appreciated the lack of honeycomb with the honey. I know it’s pretty and fancy, but I LOVE honey with my cheese and I always end up picking chunks of wax out of my molars. Cheese and Charcuterie This app paired perfectly with my Riesling, too. Sitting there after a long day of park-hopping, it felt so good to relax with a glass of sweet-dry white and a paddle-full of cheese and meat. But there was another interesting appetizer that we couldn’t pass up: Bacon and Eggs. Taking a cue from the breakfast favorite, this beautiful dish includes Maple-lacquered Pork Belly with Lake Meadow Naturals Perfect Egg and Tillamook Smoked Cheddar Grits. OK, once you get past the pork belly and cheddar grits, I know what you’re going to ask — because I asked, too! “What’s a ‘perfect egg?'” It has to do with how it’s cooked…not how it’s, um, made. In this case, the “perfect egg” is basically a sous vide egg — cooked in a water bath to a perfect 143 degrees. This turns the yolk, basically, into a custard, and it’s enchanting. I’ve never seen anything like it. Overall, this appetizer was pretty incredible. I hope it stays on the menu forever, because I WILL be having it again. Bacon and Eggs We soon turned our attention to our entrees. First up — the Braised Lamb Shank. The tender meat was served with Blue Cheese Polenta, Baby Carrots, and Butter-poached Turnips. This was beautiful, and the meat was perfectly cooked. The dark, slightly fatty meat was fall-off-the-bone and had a truly indulgent texture. The flavor was gamey (I’m not a lamb fan), but if you love lamb, this is a must! Braised Lamb Shank We also chose the Herb-Salt Seasoned Beef Tenderloin. The steak was served with fairly traditional sides, which included Caramelized Crimini Mushrooms, Garlic-Green Beans, Whipped Potato Purée, and Sauce Bordelaise. Herb Salt Seasoned Beef Tenderloin This was PERFECT. The meat was perfectly cooked to my medium rare preference, and felt like BUTTAH. And the Bordelaise added richness and depth to the dish. Herb Salt Seasoned Beef Tenderloin — Up Close We enjoyed our dishes and felt like something light would be the best way to go for dessert. The Wave takes a slightly different approach to their sweet endings; several of their options are presented as Flights, allowing you to sample from a trio of smaller desserts. Crème Brûlée is also available. Dessert Menu — Click to Enlarge I liked the variety represented in the American Flavors Flight. During our visit, it included some really interesting flavors. Closest in the picture below is Coconut Panna Cotta with Passionfruit Drizzle and Passionfruit Boba. While I’m not normally a huge fan of panna cotta (aka milk jello), I thought the Passionfruit Boba were super flavorful. American Flavors Flight Trio The S’more Graham Cracker Cake with House-made Toasted Smokey Marshmallow is a grown-up take on a childhood favorite. I could easily have put away a jumbo sized one of these. The texture was spot on — almost like a fudge — with ample, buttery graham cracker crust at the base. I’m not a huge marshmallow fan, and the stickiness of this one just got in the way of me digging into the chocolate, but it completed the concept. Smores Graham Cracker Cake Finally, the Gluten-Friendly Carrot Cake with Cream Cheese Mousse, Rum Roasted Pineapple, and Carrot Sorbet was…not the winner I’d expected it to be. With a mound of cream cheese mousse, I was expecting a flavor-packed bite of deliciousness, but this one fell flat for me in texture and taste. Gluten Friendly Carrot Cake If I get this dessert again, I’m asking for three s’mores — hold the marshmallows! ;-D Overall The Wave. I always have the same idea when I eat here: why don’t I eat here more often?? Sure, the decor, while fairly interesting (they did what they could with the windowless space), isn’t really much of a draw. But the food! It’s market-inspired, locally sourced when possible, and largely sustainable. But the best part it — it tastes amazing. And if you enjoy the study of wine or beer, there’s always something interesting to try here. While we tend to consider The Wave mostly for breakfast as a quiet alternative to the party going on at Chef Mickey’s, don’t overlook The Wave when it comes to making your dinner plans. I don’t think you’ll go wrong, and even a last minute advance dining reservation is an option if your first choice spot is already booked. Let me take a quick second to comment on the service here as well. I’ve posted several reviews here on DFB lately where I was simply unimpressed, if not shocked, with the bad service. My recent trip turned that around, and The Wave was a big part of it. I walked in for my dining reservation at 9:20pm…and the restaurant closed at 9:30. My server, Meaghan, was my best friend by the end of the meal. She was knowledgable, polite, interested in what we were doing — and just plain fun! I have to give a shout out to Chef Kimi, too, who took the time to come out of the kitchen to discuss the perfect egg with me, answering all of my questions. What a great way to end the evening! So…The Wave. Yeah. Do it. Go there. It’s doesn’t carry the panache of a signature restaurant or the draw of a character meal, but it’s one of those quiet winners when you really need to relax after a big day. Have you been to The Wave? IT’S FINALLY BACK!!!!!!!!!! Starting April 1, 2016, and running on weekends through May 1, Disney’s California Food & Wine Festival will return from hiatus to Disney California Adventure! (The Festival was discontinued when construction for Cars Land started up in 2011.) California Food and Wine Festival Welcome Center in 2010 This celebration of California cuisine will feature Festival Marketplaces, Culinary Demonstrations and Seminars, and Celebrity Chef appearances. CELEBRATION, Fla. – During 2016 Alaska sailings, Disney Cruise Line guests can experience the beauty of Alaska in a way only Disney can provide with exclusive, one-of-a-kind Port Adventures. Port Adventures are designed for Disney Cruise Line guests to make the most of their time ashore. Disney Cruise Line partners work with local tour operators to highlight each port of call, and create hassle-free, interactive adventures for families to enjoy. For the 2016 Alaska season, all ports of call include tours that feature distinctly Disney touches, beloved characters and rich storytelling to help bring local culture and customs to life. Signature Collection tours range from deluxe experiences in intimate, upscale settings to customized tours that are enhanced with experiences exclusively for Disney Cruise Line guests. Skagway A historic pathway that winds through the snow-capped mountains bordering Alaska is the Liarsville Gold Rush Trail. At the camp, nestled beside a waterfall, guests are delightfully entertained by a cast of sourdoughs and dance hall girls as they tell classic stories of the gold rush era and local tall tales through hilarious puppetry and live music. After the show, a fun scavenger hunt through the camp sets the stage for a gold-panning expedition joined by classic Disney characters, with everyone guaranteed to find the precious metal in every pan. Guests find their fortune, and gather around the campfire to roast marshmallows, and enjoy an all-you-can-eat feast featuring freshly grilled Alaskan salmon. On the White Pass and Yukon Route, guests take a vintage railroad car 3,000 feet to the summit of White Pass while weaving through cliff-hanging turns to witness rushing waterfalls and towering mountains. Guests retrace the original route of the Klondike Gold Rush where they envision the path of the early prospectors seeking their fortune. During the return trip, children ride in their own car with Disney Cruise Line youth counselors, and take part in sing-alongs, games and stories of the gold rush age. Adults relax and toast a glass of champagne or cider, and receive a unique ornament welcoming them into the White Pass Summit Club. For families looking to bring out their competitive side, the Klondike Family Challenge is full of immersive activities paired with fun challenges, like panning for gold and playing with Iditarod sled dogs. A tour of the Klondike Gold Fields brewery follows, where guests sample fresh brews and design their own root beer labels. Disney Cruise Line families leave their mark by etching their name into a wooden plank to leave at the site’s gold panning shed. Juneau Only Disney Cruise Line guests get to live the life of an Iditarod champion during the Glacier Dog Musher for a Day Port Adventure. On this excursion, guests are transported by helicopter over the massive Juneau Icefield to one of the region’s most breathtaking glaciers. Atop the glacier, they are greeted by the crew and sled dogs of the Iditarod, and then follow their new furry friends to the camp for a behind-the-scenes tour of the kennel, cookhouse and veterinary clinic. After a backstage look of the camp, guests prepare their new canine companions for an unforgettable day of mushing. Once the dogs are fed, harnessed and cleared for the trail, mushers take guests on an exhilarating, once-in-a-lifetime adventure across the pristine snow-capped glacier. Untouched Alaskan wilderness awaits at Taku Glacier Lodge, a remote outpost directly across from the picturesque Hole-In-The-Wall Glacier and surrounded by the Tongass National Forest. Guests enjoy a meal of wild Alaska king salmon, and hear stories of the lodge’s rich history and lively characters, such as Mary Joyce, a legendary adventurer who made a 1,000-mile dogsled journey from Juneau to Fairbanks in the 1930s. Teens gear up for the ultimate adventure during the Teen Exclusive Ultimate Canopy & Zip Line Expedition. Accompanied by their favorite Disney Cruise Line youth counselors, teens embark on an adrenaline-pumping, high-flying adventure overlooking Juneau’s magnificent landscape that includes 10 zip lines, two towering sky bridges over lofty tree platforms and a thrilling repel to the ground. Ketchikan In Ketchikan, Disney Cruise Line guests discover the rich culture and heritage of Annette Island, home to the only native reservation in Alaska. A signature Port Adventure gives guests a rare glimpse into a working village of the Tsimshian people. During this exclusive experience, guests learn about the lives and language of the culture through song and dance, create their very own drums, and learn a few words of the native language, Smalgyax. On the Bering Sea Crab Fishermen’s Tour in Ketchikan, guests look on as professional fishermen haul in the catch of the day in 700-pound king crab pots. An on-deck aquarium becomes the crabs’ temporary home, providing an up-close look and a chance to hold the crabs and snap a photo. After a behind-the-scenes tour of the ship, including a photo in the captain’s chair, Disney Cruise Line guests have an exclusive opportunity to dine with the crew and listen to telling stories about life on the Bering Sea over freshly caught King crab and Dungeness crab. Several Ketchikan excursions include a visit to the Great Alaskan Lumberjack Show, a rollicking competition created especially for families that features some of the world’s top timber sport athletes going head-to-head for bragging rights and the title “Bull of the Woods.”Offering a historical look at the timber industry that helped shape Alaska, the one-hour show includes events such as chopping, sawing, log rolling, death-defying speed climbing and more, plus opportunities for a few Disney Cruise Line children to participate alongside the burly competitors in select events. Lovers of the Traditional Kjottkake (that’s MEATBALLS!!!) from Akershus Royal Banquet Hall will be very excited to see what I spotted on my last visit to Epcot’s Norway! Learn About: Kringla Bakeri og CafeEpcot Restaurants Disney World Restaurants Granted, right now much of what I’m spotting in Norway are construction walls, as the Pavilion simultaneously preps for the summer openings of the Frozen Ever After attraction (in the former home of Maelstrom…sob!) and a new Frozen Character Meet and Greet. But that doesn’t mean it’s not worth stopping by to grab some favorite Norwegian treats like Skolebrød (School Bread) or a Troll Horn, which is exactly what I was expecting to find on my recent trip. And while I did indeed find those, I also found another old favorite… albeit in an all-new form. Kringla Bakeri og Kafe is now serving a snack-sized version of the popular Norwegian Meatballs that we’ve loved for years at Akershus (the home of Princess Storybook Dining in Epcot)! So, how does it measure up? Let’s find out! Atmosphere Kringla Bakeri og Kafe is the little bakery packed with all sorts of Scandinavian goodies in the Norway Pavilion. Kringla Bakeri og Kafe Inside, lots of wooden paneling and candlelit chandeliers decorate the snug space. Inside Kringla Bakeri og Kafe Decor is appropriately Scandinavian: simple, but cozy. Kringla Bakeri og Kafe Decor Check out the fireplace… perfect for all of the baking that happens here ;)! Fireplace You’ll even see small containers for ingredients hanging on the wall. From the look of the pastry case, they sure use a lot of salt and mel (flour) here. Salt and Mel The space inside is small, containing just the food and registers. But a covered area with some tables and chairs is readily available once you exit with your purchase. Outside Dining Area Now let’s check out what I brought to our table… Eats Kringla Bakeri og Kafe is primarily known for the sweet stuff! Several of the most popular items are listed on the menu, and you’ll see them on display in the bakery case — along with some other treats — to help you make your decision. Norwegian Classics Menu The Berry Cream Puffs, Rice Cream, and Troll Horns have all earned their solid reputations for great ’round-the-World snacking fare in World Showcase. Kringla Cream Puff (it’s better than it looks!!) Rice Cream Troll Horn Admittedly, the Lefse isn’t my favorite (though I know you diehards are out there). Lefse It’s more than made up for, though, by my love of School Bread! School Bread? Yes Please! If you scan the beverage options you’ll notice a few unique additions among the usual sodas and juices. Beverages Menu Carlsberg Beer and shots of Linie Aquavit Glacier, a strong Norwegian spirit, round out the list. Other Alcoholic Options Other options include Coffee, Iced Coffee, and even Viking Coffee made with Kamora Coffee Liqueur and Bailey’s Irish Cream. More Beverage Options But this last visit resulted in spotting something new to the savory meal options. They aren’t as well known as the pastries, but available sandwiches include a Norwegian Club and Ham and Apple Sandwich. Food Menu Along with some additional sweet treats, you’ll often find a few other items in the display case that didn’t make it onto the main menu, such as the open-face Salmon and Eggs. Food Items On Display But THIS one made it both to the menu AND the display case… the Traditional Kjottkake, the well-loved Norwegian Meatball dish! Traditional Kjottkake Of course, it’s impossible not to think of the full-sized entree at Akershus Royal Banquet Hall, especially since it’s such a fan (and DFB!) favorite. Here’s a look… Traditional Kjottkake from Akershus Royal Banquet Hall And now back to the new Kringla version… for the $7.49 price tag, you receive two large Norwegian meatballs on top of a good amount of mashed potatoes. It’s basically a miniature version of the entree, minus the green beans. Meatballs and Gravy The meatballs are covered in brown gravy and topped off with sweet lingonberry sauce (which I was pumped to see since that isn’t listed on the menu description). Gravy and Lingonberry Sauce I’m happy to report that nothing has been lost in the translation between the entree at Akershus and the snack-size at Kringla. The texture of the meatballs is spot on, and you can easily spy the chopped onions and seasonings mixed in for lots of flavor. Cross-Section of the Meatball The creamy potatoes and that signature mix of sweet and savory from the lingonberries mingling with the rich brown gravy combine to bring all the flavors of this popular dish that also totally works in a quick-service format. Overall Honestly, Kringla Bakeri og Kafe never disappoints whether you’re after a quick pastry during your World Showcase stroll or a heartier lunch option. But the offering of the Norwegian Meatballs really ups the game here as far as savory options go. I love that this Norwegian classic is now available outside of Akershus for folks who would like to give this dish a try, but maybe aren’t into having a full lunch or dinner with Her Royal Disney Highnesses. And with all the new activity on the way to the Pavilion, we’ll definitely be keeping an eye on things in Norway for additions both large and small! But let’s get something straight RIGHT NOW — these ain’t no Ikea meatballs, my friends! My sources tell me that Swedish meatballs and Norwegian meatballs are different things entirely. ;-D Try them and see what you think! Until next time, Hah det from Norway!
