Walter Beckman from Pensacola, Fla., knows a lot about conquering challenges. Suddenly blind in his early 20s, Beckman overcame many obstacles as he adjusted to a new way of life. This past weekend, Beckman took on a challenge of a different kind, completing the Lumiere’s Two Course Challenge – running the 10K on Saturday and half marathon on Sunday, during the Disney Wine & Dine Half Marathon Weekend presented by MISFIT. Nearly five years ago, Beckman woke up unable to see anything. He soon learned that an arteriovenous malformation (AVM) in his brain ruptured and damaged his optic nerve, leaving him blind. The shocking ordeal was difficult for him to accept, especially because at the time he was serving in the US Army Reserves. Used to living an active lifestyle and maintaining a rigorous fitness regimen, Beckman now had to re-learn the simplest of activities without his sense of sight. Adapting to being blind was a day-to-day battle, an arduous process that led to significant weight gain and, at his highest, Beckman weighed 360 pounds. After two years, he got back into running and he lost more than 70 pounds but regained his confidence, inspiring him to tackle a long distance race. Beckman smashed his goal – and more – by completing the 19.3-mile challenge at the Disney Wine & Dine Half Marathon Weekend. With the assistance of his guide, Michael Irene, Beckman crossed the finish line on Sunday, overcoming all expectations and his own self-doubt of what he could accomplish blind. Standing at the finish with his fists held high and his three race medals around his neck, Beckman was an inspiring sight to the crowd and the thousands of other runners. Check out the video to see Beckman’s journey during the Disney Wine & Dine Half Marathon Weekend presented by MISFIT. View the full article

Thousands of kids and families in Brevard County, Florida will soon have more ways to connect with nature thanks to the hard work of our crew members who recently volunteered alongside community members to help build an outdoor classroom at the Riverwalk – A Family Park. The park’s all-new Nature Explore Classroom is like a traditional playground, but is designed for kids and families to spend more time outside together and help develop fine motors skills through art, music, gardening, exploration and imagination, all while using natural materials. Take a look at our crew members in action. Crew members from the Disney Fantasy, which was in nearby Port Canaveral for the day, spent hours raking leaves, leveling the ground, and spreading mulch to get the park ready for its grand opening scheduled for later this year. They also worked together to assemble a really cool see-through art easel where park goers will be able to use their imagination to paint the nature they see around them. I’m always amazed by our crew members. Not only are they dedicated to creating magic onboard for our guests, but they make it a priority to donate thousands of hours of their personal time to benefit worthwhile causes around the world. Sophy, a youth activities crew member, shared with us that she wanted to participate in this Disney VoluntEARS event since she grew up gardening with her mother in South Africa and feels it’s important for families to spend time in nature together. The Nature Explore Classroom at the Riverwalk – A Family Park was partially funded by a $20,000 grant through the Parks Build Community, an initiative of the National Recreation and Park Association and The Walt Disney Company. The Parks Build Community program provides communities with resources to improve local parks through projects that connect children to nature. The Riverwalk – A Family Park is one of 16 grant recipients this year. Once it’s finished, the all-new Nature Explore Classroom at the Riverwalk will be enjoyed by Brevard County families, schools and community groups – building stronger connections to nature and inspiring future generations of environmental stewards. Research shows that time spent in nature creates smarter, happier, healthier kids and instills lifelong conservation values.* To learn more ways Disney VoluntEARS and Disney Cruise Line give back to the community, check out some of our past events: Disney Cruise Line VoluntEARS Lend a Hand to Build a Boardwalk at the Pine Island Conservation Center Disney Cruise Line Crew Members Make Magic in Local Communities Disney Cruise Line Crew Members Inspire Students in the Bahamas through the Art of Storytelling *According to Richard Louv’s Last Child in the Woods View the full article

Have you ever been on vacation and seen an interesting building or monument and had no idea why it’s significant? Did you rack up your international data bill searching for the answer; or did you simply snap a photo and walk away feeling clueless? With Adventures by Disney you don’t have to wonder because you have a guide who will not only show you these destinations, but also explore the meaning and history of each locale. Those of you who read the Disney Parks Blog regularly know that I often tout the virtues of exploring the world with Adventures by Disney. And while I could give you countless reasons why this is my favorite way to travel, the best selling point of all is the Adventure Guides. Adventures by Disney Adventure Guides are the ultimate storytellers, bringing to life the people, culture and traditions of a destination. I’ve been moved by personal stories of growing up in Eastern Germany before the fall of the Berlin Wall from guide Stephanie, tried my hand at working traditional Norwegian farming equipment like the kind guide Torgeir used on his family’s farm growing up, laughed along with guide Jason as he vividly reenacted traditional European fairytales, tested guide Ronald on his Costa Rican agricultural knowledge (which is seriously infallible), and learned so much more from these charming and educational stewards. Adventure Guides also help manage every detail of your trip, big and small. It’s a level of service that goes above and beyond, and it’s these sort of details that ensure your vacation goes off without a hitch. We recently asked Adventures by Disney Danube river cruise guests to share their feelings on our Adventure Guides. See what they had to say in this video! Looking to make unforgettable memories for your family on a trip to Europe? Now you can save $500 off per person on select room categories (excluding suites and categories AA and AB) for all summer 2017 Danube river cruises (sailing dates include June 21 & 28; July 5, 12, 19 & 26; and Aug. 2, 2017). Check out AdventuresbyDisney.com for more details! $500 per person Discount taken from the non-discounted prevailing River Cruise Package price as quoted on AdventuresByDisney.com on date of booking (“Regular Rate”). Regular Rates vary by departure date. Offer not valid for Suites and Categories AA and AB. Lead Guest of the booking party must travel on the Package booked. Valid for new bookings only. Bookings must be made through Adventures by Disney Travel Services, Inc. Discount not applicable towards deposit. Packages subject to availability. Cannot be combined with any other offer or promotion. Offer valid for U.S. Residents only. Subject to change without notice. See AdventuresbyDisney.com for additional Terms and Conditions. It’s high time for more 2016 Epcot Food and Wine Festival fun! Once again, we’re going beyond the Marketplace Booths for a Special Event that is new to the Festival this year: Mix It, Make It, Celebrate It! Hands-On Workshops. Similar to the Festival’s Culinary Demonstrations and Beverage Seminars, this new offering takes place daily in the Festival Center. However, the Mix It, Make It, Celebrate It! sessions offer an interactive element unique to this Special Event where participants can take tips directly from leaders in the culinary industry. The choice of topics is extensive, ranging from forming sushi rolls to pasta making and vodka tasting to pumpkin decorating (and beyond — check out the full list of options here). We attended The Art of Pastry Making with Erin McKenna. You might be familiar with Erin McKenna as the founder of Babycakes or the owner of Erin McKenna’s Bakery NYC in Disney Springs (or even her shops in New York and Los Angeles). If so, then you know that her focus is on creating tasty vegan and gluten-free goods. Since baking gluten-free items is not something I have previously attempted, I thought this would be a great opportunity to learn something new! So join me in the Chef’s Showcase at the Festival Center to check out this new Special Event! Food and Wine Festival Center Long tables are set up in front of the stage so there’s plenty of room for lots of would-be pastry-makers! Chef’s Showcase Set Up Front and center is the stage with its large preparation area and makeshift kitchen. The appliances become useful depending on which demonstration you are attending. Kitchen Area On The Stage The room is, indeed, HUGE. But even if you aren’t seated directly by the stage, large screens are also arranged to give every guest a good vantage point to follow along with the instructions, displaying an above-the-head shot of the preparation area to make sure that everybody can see what is going on! Helpful Screens Set Up Around the Room Now, this may change depending on the amount of guests attending each workshop, but for The Art of Pastry Making with Erin McKenna, eight guests were seated at each table. Even within the group setting there was plenty of space in between seats to make sure we were comfortable and had plenty of room. Table Setup Cast Members made sure that each place setting had all of the appropriate items we would need during the demonstration, with the necessary ingredients in plastic ramekins (we’ll get into all of these soon!), and pitchers of water with cups set up at each table. My Place Setting In addition to the ingredients, a fork, knife, mixing bowl and spatula were set for each guest. Plastic Mixing Bowl Spatula at Each Seat Also upon seating, guests 21 and over were served a glass of Zonnin Prosecco. Guests under 21 are more than welcome to attend Mix It, Make It, Celebrate It events as well, but obviously will not receive any alcohol . You can, however, request a soda instead. Zonnin Prosecco Once we were all settled in, the host of the event was announced: Erin McKenna! She offered a greeting along with a small “Cheers” for a toast! Erin McKenna! Erin also explained that it took some convincing for her to actually start eating a gluten-free diet. That said, once she made the switch she noticed a complete change in her lifestyle and energy. However, this change brought about a concern over the variety and quality of food choices available not only for herself but other gluten-free people as well. She started baking with a goal to create recipes for simple items such as cookies and brownies while making them incredible and special at the same time. Erin stressed that though her recipes are gluten-free and vegan-friendly, they are not intimidating and can attract all kinds of eaters — not only those on specialty diets. (We know this to be true from our own visits to Erin McKenna’s Bakery NYC!) Among Erin McKenna’s most popular items are Babycakes Brownie Bites… which is exactly what we learned to create! And if you’d like to join in the tasty fun, we have the steps listed here (and the recipe at the end of the post) so you can learn how to make them yourself. We’ll start with the ingredients, which were clearly labeled and precisely pre-measured for us (and at the end of the post we’ll list all of the proper portions for you to use at home). Ingredient One: Brown Rice Flour. Brown Rice Flour Erin explained that the the brown rice flour works as a sort of backbone of the recipe. It adds the density necessary for brownies. Brown Rice Flour Ingredient Two: Potato Starch. Potato Starch This ensures that the brownies stay soft and chewy. Potato Starch Ingredient Three: Vegan Sugar. Vegan Sugar What makes vegan sugar different from regular sugar? It is free of any unknowns being added during production (regular sugar may often contain animal byproducts). Obviously, the role of the sugar is to add sweetness. Vegan Sugar Ingredient Four: Unsweetened Cocoa Powder. (This was the only ingredient that didn’t have a lid and label, but it was certainly easy to recognize!) Unsweetened Cocoa Powder Erin prefers to use an unsweetened cocoa to add the chocolate flavor because otherwise the Brownie Bites would be too sweet. Ingredient Five: Baking Soda. Baking Soda Baking soda helps the brownies to rise and also lends moisture; this is especially important because no eggs are used in this recipe. Baking Soda Ingredient Six: Salt. Salt Okay, so this one’s pretty self-explanatory , but Erin did note that she prefers using a coarse salt over a fine one. Salt Ingredient Seven: Xanthan Gum. Xanthan Gum This was a new one for me! I learned that Xanthan Gum is crucial to the recipe because it has a binding element. Without it, your pastry will crumble. Xanthan Gum Now, add all those dry ingredients (and ONLY the dry ingredients at this point), making sure to mix them thoroughly. Time to Mix! Once the dry ingredients are mixed, we can move on to adding the next ingredients. Ingredient Eight: Canola Oil. Canola Oil Canola Oil serves as a great substitute for butter, but you can feel free to use a coconut oil instead. Canola Oil Ingredient Nine: Apple Sauce. Apple Sauce This is another ingredient that adds moisture. If you’re concerned with finding a completely safe and healthy applesauce, Erin suggests that apple baby food is always the safest choice! Apple Sauce Ingredient Ten: Vanilla Extract. Vanilla Extract Another tip from Erin: invest in a good vanilla extract! Even if it costs a few more dollars, it will last for MANY baking sessions and you will be able to taste the difference. Vanilla Extract Ingredient Eleven: Water. Water Along with adding moisture, adding water also helps to remove lumps from the batter. Again, making sure the brownies have plenty of moisture is especially important when you’re not adding milk or eggs. Allrighty, now it’s time to mix! Again! Ready for More Mixing! Whisk well until the consistency is similar to a pancake batter. If it still appears too thick, just add small amounts of water until it’s just right. Mixed! Time to add the Final Ingredient: Enjoy Life Chocolate Chips! Enjoy Life Chocolate Chips There are plenty of other chocolate chip options out there, but the Enjoy Life brand (these are semi-sweet and miniature in size) are Erin’s absolute favorite to use. Enjoy Life Chocolate Chips At this point, the batter is ready for pouring and baking. You can make these in a mini muffin pan for Brownie Bites or in regular baking pan for full-sized Brownies. The Mix It, Make It, Celebrate It! sessions last one hour and fifteen minutes, so we were served prepared Brownies Bites that were freshly baked just before the class began. They were served with a few pieces of fruit as well; always a delicious combination with chocolate! Finished Results! As I’ve grown to expect from an Erin McKenna treat, the Brownie Bite was soft and chewy, with just the right amount of decadent chocolate flavor. Gluten-Free Vegan Brownie Bite Had I not JUST attended the session spelling out all the ingredients, I don’t think I would have known the Brownie Bite was gluten-free. Brownie Bite Cross-Section If you are gluten intolerant or vegan — or happen to have a friend or family member who is — these Brownie Bites are definitely worth taking the time to try to replicate yourself. Be sure to stay tuned to the very end of the post where we’ve included the recipe for you. I have to say, I feel much more confident having been shown the process step-by-step in the workshop. Additionally, after baking (and tasting!) we were free to ask questions to make sure we were comfortable with the information, adding to the interactive aspect of the whole experience. Before you head into your own kitchen to give it a go, check out the parting gift each of the participants received… a bamboo cutting and serving board, complete with the Food and Wine Festival logo! Food and Wine Bamboo Cutting and Serving Board Food and Wine Bamboo Cutting and Serving Board Erin McKenna’s goal is to make baked goods that taste both traditional and truly delicious. I honestly knew very little about preparing gluten-free and vegan baked goods before attending this workshop and I’m impressed with how much I learned in a relatively short amount of time. Again, the range of topics for the Mix It, Make It, Celebrate It! sessions is quite varied, so be sure to check out the entire list and see if there is a topic that strikes your fancy. After all, even if your Food and Wine Festival adventure has wrapped up for this year, you know my personal philosophy: it’s never too early to start dreaming about the next one ! Each Mix It, Make It, Celebrate It! Special Event takes place at 4:00 PM daily in the Festival Center, and the cost to attend is $49 per guest. Find the recipe for Erin MeKenna’s Brownie Bites below, and be sure to let us know how they turn out for you! Brownie Bites Recipe Ingredients 6 tablespoons potato starch 3/4 cup brown rice flour 1 cup vegan sugar 1/2 cup unsweetened cocoa powder 1/2 cup Enjoy Life chocolate chips 2 teaspoons baking powder 1/4 teaspoon baking soda 1 teaspoon salt 1/4 teaspoon xanthan gum 1/2 cup melted canola oil or coconut oil 1/2 cup unsweetened applesauce 2 teaspoons vanilla extract 1/2 cup water Method 1. Preheat oven to 325 degrees. Brush a mini muffin/cupcake tray with oil and set aside. 2. In a medium bowl, measure in potato starch, brown rice flour, sugar, cocoa powder, chocolate chips, baking powder, baking soda, xanthan gum and salt and whisk. 3. Pour the canola oil, applesauce, vanilla and water into the bowl and continue mixing until batter is smooth. 4. Using a heaping tablespoon, measure the batter into prepared baking pan. Place in oven for 10 minutes, rotate and continue baking an additional 5 minutes or until center is cooked. 5. Remove from oven and allow to cool for 15 minutes before serving. Store in an airtight container for up to 5 days. Have you attended one of the new Mix It, Make It, Celebrate It! Events this year? Please let us know about your experience with a comment! The countdown is ON for a grand Disneyland Holiday tradition! Hand-Crafted Candy Canes are on their way back to Disneyland, and we’ve got all the info for you here… including dates!! The Hand-made Candy Canes in Disneyland are the stuff of legend, and you can read all about the process of making the candy canes to what it’s like to participate in “the race” by our Disneyland correspondent, Heather Sievers, here! Hand-Made Candy Canes in Disneyland! For 2016, just like in years past, the making of the Candy Canes will alternate between Candy Palace on Main Street U.S.A. in Disneyland and Trolley Treats on Buena Vista Street in Disney California Adventure. It’s truly a treat to grab one of these limited creations, so you may to want to study up on the process before you try to get your own! Prepping to Cut HOW To Get Your Candy Cane Ok. So, technically speaking, guests are not supposed to line up prior to park open. However! I always advise trying to line up about 30-45 minutes ahead of park opening anyway. (And if you are eligible to enter the park on an Extra Magic Hour morning, all the better). Once the park opens, wristbands will be distributed. Typically (based on previous years), 40 wristbands are distributed per batch with three batches per day, for a total of 120 wristbands. Cutting to Perfection One wristband is good for ONE Candy Cane, and there is a limit of ONE wristband per guest. Your next step is to head to the Candy Kitchen that is producing the Candy Canes for the day according to the batch time listed on your wristband. You may pick up your candy cane any time after your batch time, but prior to 4PM. In previous years, if you didn’t pick up your cane by 4PM, it would be sold to someone waiting on standby. Forming the Cane WHERE and WHEN To Get Your Candy Cane Please note that these dates are subject to change. Additional dates may be added. CANDY PALACE at Disneyland Friday, November 25 Wednesday, November 30 Friday, December 2 Monday, December 5 Wednesday, December 7 Friday, December 9 Monday, December 12 Wednesday, December 14 Friday, December 16 Monday, December 19 Saturday, December 24 TROLLEY TREATS at Disney California Adventure Saturday, November 26 Tuesday, November 29 Saturday, December 3 Tuesday, December 6 Thursday, December 8 Saturday, December 10 Tuesday, December 13 Thursday, December 15 Saturday, December 17 Tuesday, December 20 Sunday, December 25 The First Cane For more information or if you want to confirm weekly dates before you go, check Disneyland’s Candy Kitchen Hotline at 714-781-0112. We’re excited to share that Toy Story Land is coming to Shanghai Disneyland! Bob Iger, chairman and chief executive officer of The Walt Disney Company, along with Bob Chapek, chairman of Walt Disney Parks and Resorts, and Fan Xiping, chairman of Shanghai Shendi Group, recently celebrated breaking ground on this new expansion, which will open in 2018. We started the expansion even before opening Shanghai Disneyland in anticipation of its immense popularity in Mainland China. The characters from Toy Story have been well liked in China ever since the release of the first film in the franchise back in 1995, and Shanghai Disney Resort already has the only resort hotel in the world dedicated to the characters and stories from Toy Story. Our guests can’t get enough of Buzz, Woody and all of their pals, which made Toy Story an obvious choice for Shanghai Disneyland’s first expansion. As you can tell from the logo, Toy Story Land at Shanghai Disneyland will be both authentically Disney and distinctly Chinese, making it a one-of-a-kind experience for our guests. Everyone’s favorite toys from one of the most popular franchises ever will come to life and play in a fully immersive land with three attractions and a themed character greeting area. Shanghai Disneyland’s new Toy Story Land will be an experience guests can only have in Mainland China. It will be the perfect setting for all toys – old and new – to gather together for a day that’s more fun than a Barrel of Monkeys! So…have you planned your trip to our newest Disney resort yet? Super hero sightings, a New Orleans-style street party celebration and “Frozen” fractals all around are just a few of the things that will wow your family aboard the transformed Disney Wonder. This week we are debuting an incredible lineup of enhancements, with something exciting for every member of the family. Now that I’ve had the chance to check out the fantastic spaces and activities, I have five suggestions for you on how to have the perfect day aboard the Disney Wonder … 1. Become a trainee at the Marvel Super Hero Academy. Spider-Man, Captain America, Black Widow and other Super Heroes from the Marvel Universe host training activities all cruise long for your kids. Tag along during Open House to see firsthand how they’re helping develop young cruisers to be brave and adventurous. 2. Join the party at a restaurant celebrating the charm of the Louisiana bayou. Tiana’s dream of opening a restaurant came true, and now you get to enjoy its southern-style cuisine and spirited atmosphere. Dinner is more than just a meal there, with a lively jazz band on stage, a high-energy parade around the room and performances by Tiana herself. 3. Immerse yourself in the world of Arendelle. During our newest stage show in the Walt Disney Theatre, “Frozen, A Musical Spectacular,” you’ll feel as if you’re in the middle of a snowy world, rooting to bring back summer alongside a happy snowman, a funny looking “reindeer” and more of your favorite “Frozen” friends. 4. Drop off your kids at Wandering Oaken’s Trading Post. After the show, your kids can get more of their “Frozen” fix at Frozen Adventures in our youth club. But a word of warning, with imaginative play and hands-on activities, plus one-on-one interactions with Anna, Elsa and Olaf, you may have trouble getting them to leave this new space at the end of the night. 5. Sip a pint at a proper English pub. While the kids are having a blast with our youth counselors and characters, take time to relax in our authentic British tavern. After a whirlwind of a day journeying from the Marvel Universe to the Louisiana bayou to the Kingdom of Arendelle, you deserve a chance to enjoy the adult-exclusive fun at the new Crown and Fin Pub. Once you’ve had a chance to sail on this re-imagined ship, let me know your favorite new experiences and tips for how to make the most of a Disney Wonder cruise. View the full article

Extra, extra! There are new celebrities in town, making their debut at Award Wieners in Disney California Adventure park! I’ve got the ‘dish’ on the new street-style dogs, which took the stage earlier this week. BBQ Crunch Dog – Cheddar sausage topped with barbecue sauce, Cheddar Jack cheese and crispy fried onions Bacon Street Dog – All-beef hot dog dipped in a house-made roasted red pepper ketchup, topped with grilled onions, bell peppers and crispy bacon crumbles Spicy City Dog – Cheddar and jalapeño sausage topped with chipotle crèma, queso fresco and Pico de Gallo Uptown Chili Dog – All-beef hot dog topped with home-style chili, Pepper Jack cheese and corn chips For those looking for a classic, there’s a traditional all-beef hot dog on the menu. The vegetarian-friendly guest favorite Portobello Mushroom Philly—with marinated and grilled Portobello mushrooms, onions and bell peppers topped with Pepper Jack cheese—remains on the menu. All hot dogs are served on a toasted potato bun, with a side of seasonal fruit or Filmstrip Fries. I think you’ll agree, these new hot dogs have captivated the hearts of audiences and critics alike with their outstanding flavor profiles. Which new menu item do you want to try on your next visit to Award Wieners? Let us know in the comments below! View the full article
