It’s no secret that I love Mexican food. And when I’m in need of some the best Mexican food, I head over to Frontera Cocina by Rick Bayless at Disney Springs. And I visit as often as I can! We caught up with Chef Rick at the restaurant, that recently debuted its Taste of Baja menu, which features five new items including Spicy Ahi Tuna Tostadas. The eight-time winner of the James Beard Foundation Award made the Tostadas for #DisneyFamilia in this fun video exclusive for us. Here is the video and recipe! Recipe: Spicy Ahi Tuna Tostadas Makes 6 tostadas ¼ cup good-quality mayonnaise 1 canned chipotle chile in adobo 1/3 cup olive oil ½ teaspoon (or more) pure powdered chipotle chile 2 to 3 tablespoons finely grated ginger Salt ¾ pound sashimi-quality ahi (yellowfin) tuna fillet ½ medium seedless cucumber ½ large Honeycrisp apple, cored The juice of a large lime 6 tostadas (crisp-fried corn tortillas) Flaked sea salt for garnish Cilantro leaves for garnish In a blender or food processor, combine the mayonnaise and single canned chile. Pulse to combine, then process until thoroughly blended. In a medium bowl, combine the olive oil, powdered chipotle and ginger. With a sharp knife, cut the tuna into small dice—I like ¼-inch cubes—and scoop into a bowl. Finely dice the cucumber and the apple to the same size as tuna. Combine with the olive oil mixture and season with salt, usually about a generous ½ teaspoon. Refrigerate for about ½ hour for the flavors to mingle. Just before serving, stir the lime juice into the tuna mixture and taste. Adjust with more lime and salt if you think necessary. Smear a portion of the mayonnaise on each tostada, pile on a portion of the tuna mixture, sprinkle with flaked salt and decorate with cilantro leaves. View the full article

Ben and Kylie Story, two Central Florida residents (and self-proclaimed theme park fanatics) grabbed quite a lot of attention on social channels a few weeks ago when their jaw-dropping Disney Parks-inspired wedding attire hit Twitter. But let’s back up at bit. Ben and Kylie met a few years ago while working at a local theme park. The couple had their first date at another theme park. And then… “Our second date, we visited [Disney’s] Hollywood Studios and decided to buy the wedding ears as a laugh,” Ben said. “Little did we know that we’d be using those same hats at our Epcot bachelor/bachelorette party!” Ben, who regularly attends the International Association of Amusement Parks and Attractions (IAAPA) convention in Orlando, often creates special themed jackets to wear to the convention to really get into an adventurous spirit. Since theme parks have been – and continue to be – such a big part of their lives, Ben decided to create a very special jacket themed after Disney Park guide maps to wear for their 2018 wedding. But creating one inspired by our park maps was no small task – it required three months of searching for the proper material, and then sewing and tailoring before it was finished. When Kylie heard about Ben’s plan, she decided to get into the park spirit, too, designing her bridal bouquet out of park maps – and even hiding a few Hidden Mickeys in there. “The bouquet just seemed so perfect. It will last a lifetime [and] represents our greatest hobby,” Ben said. “We headed to Disneyland as part of the honeymoon so there were even Disneyland maps in there!” Today the couple says they still get compliments on their wedding attire – especially when Ben wears his jacket out to the park for a day. Epcot’s International Food and Wine Festival will be starting before you know it (August 30 to November 12, to be exact!), and with 75 (!!!) days of incredible food booths, demonstrations, music, and special events on tap, you’re going to want to start your planning ASAP! Epcot’s International Food and Wine Festival Luckily for you, the DFB has been playing the Food and Wine game for decades, and we’ve gathered everything you need to know into one handy source: the 2018 DFB Guide to Epcot Food and Wine. And today, we’re talking about one of the most challenging aspects of planning your visit to Food and Wine: how many days do you need to budget in order to really experience this fun but complex festival? You might want to consider spacing our your food booth visits by interspersing some of the Festival’s other events — and throwing in a few must-do Fastpass+ reservations. Don’t forget to plan some Fastpass+, too! Planning out those attractions not only helps to balance out all that Food and Wine fun, it also gives you a break from the crowds in World Showcase, provides you some much-needed downtime in the air conditioning, and ensures you’re not wasting valuable Festival time in line for rides! Another important aspect of Food and Wine to consider when planning your visits is the crowd level at Epcot during this time. Like many of you, we don’t love being elbow-to-elbow with sweaty strangers all day long — but Food and Wine is crazy popular and will be crowded a lot of the time. Prepare to line up for fun! If you’re super crowd-averse, we recommend visiting the Festival first thing in the morning — that’s 9AM for the Festival Center and 11AM for the food booths — and to avoid visiting on the weekends. What this means for your overall planning is that you might need to consider adding another morning or two to your schedule (perhaps bringing your total visits to Epcot up to 3-4 half-days) and investing in a Park Hopper so you can escape to other parks in the afternoons. Some dishes are worth fighting the crowds for… But what if you really can’t afford to spend more than a day at Epcot, no matter how awesome it is? We’ve got you covered there, too, with a recommended one-day Festival strategy that’s straight out of the DFB guide. The other can’t-skip advice we offer: familiarize yourself with the food booths and their menus before you arrive. The Disneyland Donut Cart has done it again! They’ve brought back the Dole Whip Donut! Disneyland’s Dole Whip Donut We first told you about this tropical beauty back in April, when we basically fell for it before we even tried it. I mean, it comes with a cocktail umbrella. Disneyland Dole Whip Donut As you can see, this donut is totally Instagram-able! Just find yourself a castle, and click away! Dole Whip Donut Inside this creation is pineapple filling with bits of fruit in it, so it packs a lot of tropical flavor! Inside the Dole Whip Donut The topping is meringue, toasted slightly. All told, the donut is delicious and simple, just like a Dole Whip! We’re happy to share today that a new series of #DreamBigPrincess digital shorts, created by young filmmakers, is on the way that will inspire girls everywhere to dream, create and celebrate who they are by showcasing well-known and beloved role models. Plans for the series were unveiled at the United Nations Foundation’s Girl Up Leadership Summit in Washington D.C. Each aspiring filmmaker will be paired with an inspirational interview subject spanning a diverse range of professions. The young women will capture the stories of these incredible individuals, along with their advice for achieving success. Jennifer Lee, director/writer of “Disney’s Frozen” and CCO of Walt Disney Animation Studios, is just one of the talented women who will be featured in the series. In addition to supporting young aspiring filmmakers and sharing inspiring stories around the world, the #DreamBigPrincess campaign aims to make a tangible difference for girls who face challenges in achieving their dreams. Planning ahead for big holiday events is very important, and New Year’s Eve is right there at the top of the list. This year, if you’re looking for a unique experience outside of the theme parks, Disney’s Contemporary Resort is the place to be. But you’ll have to hurry, because party bookings are now available! To ring in 2019, two New Year’s Eve celebrations are available at Disney’s Contemporary Resort: Pixar Party: A New Year’s Eve Celebration (recommended for families) and Disney Countdown to Midnight, including an option to purchase VIP access to the Ink and Paint Club (recommended for adults without kids). Both celebrations will feature entertainment, music, food and other refreshments, plus a viewing of the Magic Kingdom New Year’s Eve fireworks to cap off the night. A special appearance by Mickey Mouse and Minnie Mouse. Ticketed guests can visit the lounge throughout the evening, starting with a featured reception from 7-8 p.m. Highlights of this special reception include: Photo opportunities with Mickey Mouse and Minnie Mouse with a unique Disney Animation backdrop. There’s a shiny new trend coming to Disneyland and Walt Disney World Resorts – and it’s as tasty as it is beautiful! Iridescent treats are now available on both coasts, and, might I say, they go brilliantly with those adorable Iridescent Headbands and Iridescent Spirit Jerseys that you might have seen around the parks recently… In case you’re wanting to get out there and try these for yourself, here’s a guide all of the places you can find these iridescent treats! First up is the CUTEST Iridescent Cupcake at Disneyland Resort. This confetti and passion fruit cupcake is filled with passion fruit and mango and finished with a tri-colored white chocolate Champagne mousse. At Disney’s Yacht and Beach Club Resorts, there’s a sweet treat at the end of the rainbow – it’s a Rainbow Cookies ‘n Cream Blondie! This chewy blondie has chunks of chocolate cookies and rainbow sprinkles inside, is coated with white chocolate, and topped with a fondant and chocolate ears. You’ll find it at Beach Club Marketplace and The Market at Ale & Compass. Golden Oak Outpost is a counter service spot conveniently located between Frontierland and Adventureland in the Magic Kingdom at Walt Disney World. Featuring fried eats and outdoor seating, it’s the place to grab some Chicken Nuggets, Waffle Fries with Queso, or Chocolate Chip Cookies. Golden Oak Outpost We enjoyed some Barbecue Chicarrons back in February, along with some Chili Cheese Waffle Fries, but these items were recently replaced with two new fried options: Jalapeno Poppers and Cauliflower! It’s nice to have two new vegetarian snack options, and they both have promise! Jalapeno Poppers and Fried Cauliflower The Cauliflower is a spicy battered, deep fried option served in a sizable portion. Unless you’re deeply committed to cauliflower, you can probably share these. Cauliflower While they’re described as spicy, we didn’t get a lot of spice from these. Truth be told, there was a definite lack of added flavor, so what you get is straight up cauliflower and (admittedly tasty) fried batter, but no real seasoning. Cauliflower with Garlic Ranch Dipping Sauce To add flavor, the Cauliflower comes with Garlic Ranch Dipping Sauce, which is delicious. Garlic Ranch Dipping Sauce The Cauliflower is cut into reasonable sizes for frying and eating (no giant or miniature pieces here), and we appreciate the lovely, dark color. Cauliflower And in case you’re concerned that the Cauliflower might be a little hard to bite into, fear not. It’s cooked all the way through and soft enough to bite into comfortably. Interior of the Fried Cauliflower If you prefer your spicy food to be a little, um, spicy, you might opt for the Jalapeno Poppers here instead. While they don’t have a serious kick, they do at least offer a bit of the heat we expect from a jalapeno. Jalapeno Poppers These are breaded before being fried, and they have a little crunch on the outside. It’s a bit spotty and could’ve been more consistently coated, but the added texture is nice. Breaded Jalapeno Poppers These are an okay size. Each one probably requires two or three bites. And with the hot cheese inside, you might want to exercise a little caution anyway. :p Jalapeno Popper The interior is packed with Nacho Cheese, which is hot when first plated. (Ours had cooled a bit before we grabbed this pic.) We love that there’s plenty of cheese in there, though. Interior of Jalapeno Popper The Jalapeno Poppers are served with G.O.O. Sauce, which seems to be a thick raspberry sauce. We weren’t big fans of the poppers with the G.O.O. Sauce, but kudos for the creativity. The poppers were awesome with the Garlic Ranch Dipping Sauce from the Cauliflower dish, though, so be sure to ask for one of each if you’re just grabbing some Poppers! G.O.O. Sauce = Raspberry Sauce It’s always fun to see what’s on the menu at Golden Oak Outpost, and with some effort, they tend to offer interesting eats in addition to old favorites. A Walt Disney World employee was killed in an accident at Disney’s Pop Century Resort. According to reports, 33-year-old Juan Alberto Ojeda was unresponsive at the hotel property and declared dead after 9 a.m. Disney’s Pop Century Resort In a statement, Walt Disney World Resort president George A. Kalogridis said, “All of us at Walt Disney World Resort are deeply saddened today by the loss of one of our Cast Members. Our thoughts and concerns are with his family, friends, and fellow co-workers.” The Orlando Sentinel reports that no additional information on the accident was available, but that this is still an evolving story. Construction on the Disney Skyliner gondola system – the newest form of transportation at Disney World – is occurring at Pop Century. Officials have not stated that the accident was related to the Skyliner construction.
